Even before this Watermelon Lime Vodka Cocktail, I could NOT get enough watermelon. No really, I think my skin is taking on a reddish hue!
I am almost embarrassed to say that on more than one occasion, just in the past 2 weeks alone, I have eaten ¼ to ½ a watermelon all by myself! I may have eaten a whole one in a 24 hour period, and I am not finished yet! They are just SO good this year! AND good for you! Watermelon has great health benefits.
So of course I would also gravitate towards making a watermelon cocktail or two. After all...I do love my cocktails, lol!
Expert Tips for Watermelon and Lime Vodka Cocktail
If you are looking for something a little different...give this a whirl (ha-ha...literally in your blender or Vitamix) and enjoy!! The easiest way to make this drink is with your blender. While you could use a hand masher, the puree is what you are looking for to create a creamy texture.
Ingredients for this Vodka Cocktail
You won't believe how easy this drink is to make and most likely you have most of the ingredients on hand!
- Pureed watermelon
- good vodka
- ice
- lime
- simple syrup (Check out how to make the simple syrup in my Low Carb Vodka Lime Coolers recipe)

Watermelon & Lime Vodka Cocktail
Ingredients
- 2 heaping cups watermelon chunks
- ½ cup of the watermelon juice that results from cutting the melon
- ¼ cup fresh squeezed lime juice
- Simple syrup to taste see notes
- ½ cup - 1 cup Vodka
- Ice
- Watermelon balls or triangles and lime segments for garnish
Instructions
- Place watermelon chunks and watermelon juice in your blender, give it a whirl until it is pureed.
- Add in lime juice and simple syrup and pulse until combined, taste and adjust to your preference of sweetness.
- Add in ½ cup vodka, pulse and taste. Adjust to your preference for sweetness and strength.
- Fill tall glasses with ice, and pour mixture over-top.
- Garnish with watermelon balls and lime. Serve.
Notes
If you like a little fizz in your cocktails, add in a splash or two of club soda or lemon-lime soda.

I could easily eat a whole watermelon in a 24 hour period. Of course, mixing a cocktail such as this would make me feel less gluttonous because it's using the watermelon for an actual recipe. Thanks for assuaging my guilt!

Added 6 ice cubes and 1/4 cup Midori to the blender instead of the 1/2 cup watermelon juice (the watermelon I had wasn't that juicy). Used 1 oz. maple syrup for the sweetener (I use it often as a substitute for simple syrup). Really refreshing on a hot summer afternoon!
