Butter Cream Easter Eggs
Hope everyone who celebrates has a wonderful Easter!!
Try not to OD on candy - personally for me it's all about Peeps that get a bit stale.
Growing up with 5 kids in the house was hard for me at Easter...I was always afraid someone would steal my Peeps before they were ready to be eaten lol! I kept guard.
I always slept over my grammy's house the night of Easter after the festivities were over with all the cousins, aunts and uncles. I would call home multiple times the next morning to ensure my basket was safe and sound - gotta have your priorities in life!!
My Grammy would have the grandchildren over the week before Easter to make Easter Eggs of the candy kind...it was so fun to make them with everyone but no one could compare to the ease and skill Grammy had shaping, dipping and setting them to dry.
If you have never made butter cream eggs or coconut cream eggs for Easter, you should -Â Butter Cream Easter Eggs are easy and very good.
Butter Cream Easter Eggs
1 stick of butter, softened
8 oz of good cream cheese, softened
2 pound bag of confectioners sugar
2 teaspoons of vanilla
Dark or milk chocolate for melting
Combine the butter and cream cheese until smooth.
Add in the vanilla and sugar and stir until smooth
Cover your bowl and refrigerate for at least 3 hours or overnight to let the flavors mingle.
When ready to shape the eggs, grab about 3 tablespoons worth at a time and shape into the traditional ½ egg shape. You could also make a huge one if you want.
The filling will be cold and become more malleable with your warm hands.
Set shaped eggs on a parchment paper lined baking sheet and place back in the fridge for 10 minutes or so to get cold again.
For milk chocolate use chocolate chips, for dark chocolate I use Hershey's Special Dark - the large bars. Break up chocolate and melt in the microwave for 45 seconds, stir then another 30 seconds or more depending on your microwave. 1 big chocolate bar does about 5 eggs.
This recipe will make about 20 eggs.
For coconut cream eggs, add in ¾ cup of coconut to the ingredients above.

Funny...my mother-in-law took the Peeps out of the package a week ago so they'd be "perfect" for Easter. I can't stand the things fresh - but stale? Can't keep my hands off of them! Happy Easter!

What a fun recipe. Maybe I'll do it with the kids the next time they are off from school.
And I'm with you on the stale peeps! I use to open the package and let them sit until they got stale as well. Best way to eat them.
My kids like getting them all puffy in the microwave. LOL
