Raise your hand if you enjoy a colorful Caprese Salad! It's one of my favorite things to eat. I especially enjoy making one with artisan tomatoes, after all, we eat with our eyes first, right??
Caprese Salads are so easy to make and a favorite of many! Whenever I make a simple dish that is healthy and pretty, I feel a little bit glamorous! There's just something about it! I can be home in my pj's eating something like this and think to myself, bet this is what Jennifer Aniston eats, lol!
Speaking of a Hollywood darling, have you had a chance to tune in to Hollywood Darlings, on Pop TV, starring some of my (and yours, I'll bet) iconic childhood favorite actresses? Beverly Mitchell (7th Heaven), Jodi Sweetin (Full House and Christine Lakin (Step by Step). I know you had to watch at least one of these three show. My favorite was 7th Heaven, I don't think I missed an episode.
Creator Jimmy Fox had the idea to put three of his childhood favorite actress together and watch what happens. The beauty of Hollywood Darlings is that Beverly, Christine, and Jodi have all been friends in real life for ages, so as Beverly said: "I have a job where I get to hand out with my best friends all day, whats not to love?" You can sure feel that coming off the screen as you watch.
These ladies are friends, mom, daughters, wives with a splash of Hollywood thrown in. The show is SO fun! And I want to hang out with Christine! She's the crazy one of the bunch and I love it!
Last week I had the chance to meet the ladies, ask questions (which was so fun) and even get glammed up by professional makeup artists. The event was open to the public and hundreds of fans turned out. After spending some time with Jodi, Beverly, and Christine, I now want to watch the show even more.
I watched season one and it's a fun show, the ladies do their best to navigate motherhood, family, their careers and more. They play exaggerated versions of themselves in this fun improv-reality show! Hollywood Darlings is totally relatable and funny, I especially love the crazy social situations the ladies find themselves in from time to time!!

Caprese Salads are one of my favorite things to eat when tomatoes are in season, whether it is a stacked salad or a bowlful, I am in! My trick for when tomatoes are not at their best is to use smaller tomatoes, like grape tomatoes since they always seem on point. My current obsession happens to be artesian tomatoes and heirloom tomatoes, I seriously can not get enough of them!
I have seen some make a vinaigrette for their Caprese, that's delicious, however...I like it simple. Just salt, pepper and balsamic glaze and I am a happy, happy gal! I could literally eat this every day (and sometimes do)! SOOO simple, yet so delicious! Imagine a platter of this at your next dinner party? People will love it and it just doesn't get simpler!
You can make your own balsamic glaze (aka balsamic reduction) at home by simmering balsamic vinegar down until it thickens, however, I highly suggest buying a bottle to have on-hand. Making it at home truly stinks up the house, my kids cannot stand it when I do, so I haven't in a few years. Having a bottle on-hand in the fridge for when the mood strikes is fantastic! I could literally drink it...That's how much I love it! I use it on various appetizers and salads.

Caprese Salad
Ingredients
- 1 pound small artisan or heirloom tomatoes halved
- Fresh Basil leaves
- Fresh Mozzarella I like using halved bocconcini for this (which are the smaller balls, however you can also tear up or chop up a larger mozzarella ball)
- Salt and fresh cracked pepper
- Balsamic glaze
Instructions
- Arrange your halved tomatoes and halved bocconcini (or sliced/chopped mozzarella) in a shallow bowl, add a nice amount or basil leaves. Season with a pinch of salt and a nice amount of black pepper.
- Drizzle with balsamic glaze and enjoy!
