Pomegranate Salsa

  • 1 cup pomegranate arils (seeds)
  • 2 TBS chopped scallions
  • ½ TBS minced red onion
  • 1 TBS minced jalapeno
  • Lemon zest
  • 8 oz brick of cream cheese
  • 2 TBS honey
  • 2 tsp fresh lemon juice
  1. In a mixing bowl, combine pomegranate seeds, scallions, onion, jalapeno, and zest. Toss to combine.
  2. Place cream cheese on a serving plate, top with pomegranate salsa.
  3. Place honey in a small ramekin, heat in microwave for 10 seconds or so, add in lemon juice and stir. Pour over assembled cream cheese/Pomegranate Salsa. Serve with pita chips or water crackers.
If you don't enjoy spice, leave out the jalapeno.

If you do enjoy spice, add a pinch of cayenne pepper to your hiney lemon mixture or a few dots or Sriracha.
