Caprese Salad

  • 1 pound small artisan or heirloom tomatoes, halved
  • Fresh Basil leaves
  • Fresh Mozzarella (I like using halved bocconcini for this (which are the smaller balls), however you can also tear up or chop up a larger mozzarella ball)
  • Salt and fresh cracked pepper
  • Balsamic glaze
  1. Arrange your halved tomatoes and halved bocconcini (or sliced/chopped mozzarella) in a shallow bowl, add a nice amount or basil leaves. Season with a pinch of salt and a nice amount of black pepper.
  2. Drizzle with balsamic glaze and enjoy!
You can make your own balsamic glaze (aka balsamic reduction) at home by simmering balsamic vinegar down until it thickens, however, I highly suggest buying a bottle. Making it at home truly stinks up the house. Having a bottle on-hand in the fridge for when the mood strikes is fantastic. I could drink it...That's how much I love it! I use it on various appetizers and salads.
