Asian Edamame Salad

Ingredients
  • 2 cups edamame (shelled)
  • 2 cups shredded carrots
  • 1 cup chopped cucumber
  • ½ cup chopped red onion
  • Cilantro
  • Jalapeno slices (optional)
  • Dressing
  • 1 TBS grapeseed or olive oil
  • 1 TBS soy sauce
  • 1 TBS rice wine vinegar
  • 1 tsp ginger paste
  • 2 tsp garlic paste
  • 1 TBS honey
  • 2 TBS sesame oil
  • S & P
Instructions
  1. Assemble salad ingredients in a medium bowl, tossing to combine.
  2. Combine dressing ingredients in a mason jar and shake until emulsified. taste and adjust for your preference.
  3. Pour dressing over salad, toss and enjoy!
Notes
Feel free to add in peppers, additional vegetables and or herbs or whatever you wish to make this salad your own.
