Ingredients

  • 1.5 pound pieces of salmon or 3-4 salmon fillets

Garlic Oil

  • 1 TBS minced garlic or garlic paste
  • 3 TBS grapeseed, avocado or olive oil

Sriracha Honey Sauce

  • Salt and pepper
  • 3 TBS Sriracha sauce
  • ¼ cup honey
  • 1 ½ TBS fresh lime juice
  • 1 TBS garlic paste (or 1 clove of minced garlic)
  • Optional cilantro, parsley or scallions for garnish

Instructions

  • Preheat oven to 400 degrees.
  • Make your garlic oil by combining oil, garlic and a bit of salt and pepper. Allow it to sit for 10-20 minutes. If you are in a hurry, press garlic with back of spoon into oil to release flavor.
  • Season both sides of your salmon with salt and pepper.
  • Brush both sides of salmon lightly with garlic oil and place salmon skin side down on aluminum foil, on top of a baking sheet. Double layer foil to ensure no leaks.
  • Combine sauce ingredients in a small mason jar and shake until combined (or whisk together in a small bowl)
  • Brush half of the sauce onto salmon mostly close foil (leaving an opening top center for steam to escape).
  • Bake for 15 minutes. Pull from oven, carefully open foil and brush with remaining sauce.
  • Open the foil (folding it back to expose salmon) place back into oven for an additional 5 minutes or so until salmon is done to your liking. Actual cook time depends on size and thickness of your fish.
  • Garnish with snipped cilantro, parsley or scallions and serve.
