This simple sheet pan Asparagus Caprese Salad recipe is always a hit! It is a delicious vegetarian dish as is or a fabulous starter or light meal!

- ¼ cup avocado or olive oil
- 2 cloves garlic, minced
- salt and pepper
- 1 bunch of asparagus, trimmed
- 1 pint grape tomatoes (or plum tomatoes, halved) or a combination of tomatoes
- 1 pint Bocconcini Mozzarella balls or whichever mozzarella variety you prefer (soo post for varieties)
- Basil
- Balsamic Glaze
This recipe works all year round. If tomatoes and asparagus are not local in season at their peak, fine! Since you are roasting the veggies, it gives them more flavor.
Feel free to make extra seasoned garlic oil for extra wetness or for any meats/veggies.
Adding jumbo lump crab meat takes this to another level!
