Ingredients

  • 2 pounds boneless chicken breasts
  • Salt & pepper
  • 2 eggs
  • ¾ cup flour
  • 1 ¼ cup breadcrumbs
  • 2-4 TBS grapeseed or olive oil
  • Pasta sauce for dipping
  • Optional garnish: chopped parsley and grated or shredded Parmesan cheese

Instructions

  • Cut chicken into bite-sized chunks (either one-bite chunks or two-bite chunks), season with salt and pepper and then set them aside.
  • Whisk your eggs until frothy in a small bowl.
  • Grab a couple of paper plates (for easy cleanup) and place breadcrumbs on one plate and the flour on the other plate. Season flour with salt and pepper (and if you like garlic salt in place of salt or garlic powder)
  • Dip each piece of chicken first into the flour to coat, shaking off the excess and then dip it into the egg mixture, shaking off the excess and then coat with the breadcrumbs.
  • Place on a baking sheet until ready to cook.
  • Heat oil in a non-stick pan and cook chicken bites in batches until browned on all sides. It doesn't take long. Add small amounts of additional oil as needed. After all chicken pieces are browned, bake at 350 for 8-10 minutes or until cooked through (cook time will vary based on the size of your chicken pieces).
  • Serve Chicken Parmesan Bites alongside pasta sauce, sprinkle both with Parmesan cheese and fresh parsley for garnish and enjoy!
  • Cooking Tips: First, make sure your oil is hot before you place chicken pieces in (or else they will absorb too much oil) test it out bt adding one piece, you want to hear a little sizzle as it hits the pan.
  • Second, don't crowd the chicken pieces as they cook, if you do they will become soggy due to steam. The same goes for when you place them in the oven. Use tongs for easy, gentle turning of the chicken.
