How To Make Chicken Parmesan Bites
To make these fun Chicken Parm Bites, start with boneless chicken breasts. Cut them into chunks (either one-bite chunks or two-bite chunks), season with salt and pepper and then set them aside. Grab a couple of paper plates for easy cleanup and place breadcrumbs on one plate and flour on the other (season the flour with salt and pepper and if you like some garlic salt or garlic powder). In a bowl whisk 2 eggs.
Then simply dip each piece first into the flour to coat, tap off the excess and dip it into the egg mixture, shake off the excess and coat with the breadcrumbs and place on a baking sheet until ready to cook. This is a great recipe for your kid's help out with at any age!
Heat oil in a non-stick pan and cook chicken bites in batches until browned on all sides. It doesn't take long. Add small amounts of additional oil as needed. After all chicken pieces are browned, bake at 350 for 8-10 minutes or until cooked through. (Cook time will vary based on the size of your chicken pieces).
Serve Chicken Parmesan Bites alongside pasta sauce, sprinkle both with Parmesan cheese and fresh parsley for garnish and enjoy!
Cooking Tips: First, make sure your oil is hot before you place chicken pieces in (or else they will absorb too much oil) test it out by adding one piece, you want to hear a little sizzle as it hits the pan.
Second, don't crowd the chicken pieces as they cook, if you do they will become soggy due to steam. The same goes for when you place them in the oven. Use tongs for gentle turning of the chicken pieces.
For fun, I have also made these Chicken Parmesan Bites and placed them on skewers for an easy pick-up app. You can skewer either just one or two at a time. The kids like it when I melt Mozzarella cheese overtop.

Ingredients
- 2 pounds boneless chicken breasts
- Salt & pepper
- 2 eggs
- ¾ cup flour
- 1 ¼ cup breadcrumbs
- 2-4 TBS grapeseed or olive oil
- Pasta sauce for dipping
- Optional garnish: chopped parsley and grated or shredded Parmesan cheese
