Ingredients

  • 5 pounds of wingettes or chicken wings cut into drum and wing
  • 3 cloves garlic minced or 3 TBS garlic paste I prefer the garlic paste for this that way it doesn't burn I swear by Gourmet Garden found in the produce aisle refrigerated area
  • 2 TBS minced ginger or 2 TBS ginger paste I prefer the ginger paste for this that way it doesn't burn I swear by Gourmet Garden found in the produce aisle refrigerated area
  • 1 cup soy sauce
  • 1 cup honey
  • ¼ cup chili with garlic sauce a little more if you like things HOT
  • cup sesame oil
  • squeeze of fresh lemon juice or a splash of rice wine vinegar
  • snipped scallions or chives and/or sesame seeds for garnish sliced (more for garnish)

Instructions

  • Combine all ingredients BUT chicken wings in a bowl and whisk vigorously until combined.
  • Remove about ¾ cup of the marinade and reserve.  THIS will be what you baste your wings with before you remove them from the grill.
  • Place wings in the bowl and allow them to marinate 2 hours or longer. When ready to grill, heat your grill to med-high and cook your wings till crispy and done, basting them often with the reserve marinade TIP: remove 2 TBS of the marinade again, BEFORE you brush that first win), for basting the wings one last time before serving them...mmm!. That way you know their will be no cross contamination. If you forget you can bring leftover marinade to a boil and the use after.
  • Once wings are perfect on the outside, move them up to your grill basket or turn off the heat just below them and finish on indirect heat (like an oven would do). Cook time on the wings should be about 20 minutes...unless your wings are large. Then you'll want to grill for 25 minutes or more.

Notes

If you want to only make 2 or 3 pounds of chicken wings, just halve the chicken marinade ingredients.
Move smaller wings to indirect heat or top rack sooner than the larger wings.
