Air Fried Mini Sweet Peppers are surprisingly delicious and easy to make. Air Fryer Peppers are ready in 20 minutes or less. Perfect for tapas, a side dish, snack or light meal. Serve these deliciously charred roasted peppers as is or topped with your favorite cheese.

- 1 pound mini sweet peppers
- ½ TBS avocado or olive oil
- Kosher salt and black pepper
- Optional: a couple shakes of garlic powder and onion powder
- Optional: a couple of shakes of red pepper flakes
Clean and dry peppers.
Cut tops off peppers and for those that may have seeds inside clean them out (usually no seeds or just a small amount are in mini sweet peppers)
In a work bowl, toss peppers, oil, salt and pepper until evenly coated.
Dump peppers into air fryer basket/tray (its ok if they are a little on top of one another). Set air fryer at 390 for 20 minutes.
After 10 minutes, give your peppers a good stir, moving them all around.
Check again after 5 minutes, stirring again. Cook another 5 minutes or until done (more or less, depends on size and quantity of peppers).
Enjoy as is or top with freshly shredded Parmesan cheese, crumbled feta cheese, blue cheese or goat cheese. You can also top with additional kosher salt or your favorite flavored salt (spicy or black lava, etc).
Nutritional information will vary based off of size, color and total peppers used. It includes the Parmesan which you can leave out of you like.
This recipe is easily adjusted to using a variety of cheeses to top it with as well as using a variety of peppers.
