Asian Edamame Salad recipe is light & bright tasting. Easy to customize this edamame salad. A perfect BBQ side dish that goes well with grilled meats and seafood. Holds up great!

Ingredients

  • 2 cups edamame shelled
  • 2 cups shredded carrots
  • 1 cup chopped cucumber
  • ½ cup chopped red onion
  • Cilantro
  • Jalapeno slices optional
  • Dressing
  • 1 TBS grapeseed or olive oil
  • 1 TBS soy sauce
  • 1 TBS rice wine vinegar
  • 1 teaspoon ginger paste
  • 2 teaspoon garlic paste
  • 1 TBS honey
  • 2 TBS sesame oil
  • S & P

Instructions

  • Assemble salad ingredients in a medium bowl, tossing to combine.
  • Combine dressing ingredients in a mason jar and shake until emulsified. taste and adjust for your preference.
  • Pour dressing over salad, toss and enjoy!

Notes

Feel free to add in peppers, additional vegetables and or herbs or whatever you wish to make this salad your own.
