Make your seasoning blend by combining salt, pepper, onion powder, Italian seasoning and paprika. Stir or until combined. Set aside.
Pat steak dry. Cut your steak into similar size chunks, pat dry again and allow to sit for 15 minutes to let the chill come off for more even cooking.
Get a pot full of water, salt it well and turn on high.
Season steak chunks, tossing to coat evenly. Add in garlic pasta (or the powder) and toss till incorporated. Alternately, you can also run the steak down with the paste before seasoning.
Heat a large skillet / pan with sides, add in oil and butter and once hot, add in onions and sauté for 1-2 minutes, push to one side and add in steak chunks, allowing some space in between so they sear vs steam.
Add a few splashes of Worcestershire and the garlic.
Simultaneously, drop gnocchi in the boiling water water and cook according to package instructions, pulling a minute or two before recommended.
Once steak is med-rare, med (it won't take long as long as you are not cooking the steak straight from the fridge) or done to your liking remove the steak bites & onions and transfer to a plate or container.
Dump gnocchi into pan, add a little nob of butter and cook for 1 minute or so, add in any fresh herbs you feel like or scallions (or not) add steak and onion back in and remove from heat, toss well and scrape out mixture into a serving dish or platter. Garnish with fresh parsley or whatever fresh herbs you like and dig in.
