- 3 mangos cut into cubes
- 1 TBS minced jalapeno more or less
- 1 TBS red onion more or less
- Squeeze of fresh lime juice
- 1 TBS Fresh chopped cilantro or parsley
Combine all ingredients in a small bowl, toss until incorporated.
Serve in a small bowl with chips or as an accompaniment to quesadillas, tacos or fish.
If the mango isn't very sweet, you can make a small amount of Honey Lime Dressing and toss to coat or drizzle a small amount of honey or agave. Yum!
