This east to make summer Pasta Salad if full of flavor and can hold up at a BBQ or picnic. Made with a seasoned garlic oil and roasted tomatoes this simple summer side dish compliments an array of grilled meats or sandwiches.

Garlic Oil
- ½ cup avocado oil or olive oil
- 2 cloves garlic, minced nice big cloves or 2 TBS garlic paste

Pasta Salad Assembly
- 1 pound pasta cooked to package instructions (farfalle or fusilli or you fav that does well in a pasta salad)
- 1 pint grape tomatoes (or more)
- ½ cup toasted pine nuts
- 6 oz arugula (more or less)
- 1 cup freshly shredded Parmesan cheese
- ½ TBS more or less seasoned salt (see notes)
- 1 jalapeno, sliced thin (optional)
- scallions sliced thin (optional)
Use homemade seasoned salt or store bought. Salt content varies. Look for something with a number of additional spiced in it. You can also choose to use Greek seasoning for this bow tie pasta salad (Cavendar's is my fav, I am never without it!!)
To make your own seasoned salt combine:
- 2 TBS Kosher salt
- 2 teaspoon black pepper
- ¾ teaspoon paprika
- ¾ teaspoon garlic powder (you can also use dried chips for a different texture)
- ¾ teaspoon onion powder (you can also use dried chips for a different texture)
- a shake or two or cayenne (red ) pepper
- Optional add in ½ teaspoon dried parsley
Add as much or as little of the tomatoes, pine nuts, arugula etc. Make this easy summer pasta salad your own.
Serves 8-10 as a side dish. 4-5 as a main dish.
