Ingredients

  • 2 cups chopped strawberries
  • ½ cup sugar
  • 2 TBS water

Instructions

  • Combine all ingredients into a small pot and heat over medium heat until bubbly.
  • Stir stir stir, until strawberries are limp. Add additional water if necessary (strawberries will all have different water levels).
  • Cool down and use immersion blender or blender to puree.
  • You want this thinner than jam, like the consistently of maple syrup (or a little thicker).
  • Store in a mason jar in your refrigerator until ready to use.
  • When ready to make a strawberry soda, combine ice, a couple tablespoons (more or less based on preference) and seltzer, club soda or sparkling water. Stir to combine and enjoy!
  • See Variations above or notes below for additional flavor ideas.

Notes

Add more or less sugar based on your taste or calorie preference.
Add a half of a vanilla bean or vanilla extract for strawberry vanilla soda.
Add in some fresh squeezed lime juice for strawberry lime soda.
Combine your fruit of choice with the strawberries (like blackberries, raspberries or blueberries) for homemade berry soda.
Add in a splash of heavy cream and you'll have an Italian Strawberry Crème Soda.
Make it a cocktail by adding vodka. Muddle fresh strawberries and basil add the puree, vanilla vodka and sprite (or simple syrup) or club. Yum!
