Ingredients

  • 2 TBS grapeseed or olive oil
  • ½ cup chopped Vidalia onions
  • 2 cloves garlic minced
  • 2 cups tomato sauce or more, depends on pan size. You want an inch of sauce
  • 1 teaspoon paprika
  • ½ teaspoon cumin if you enjoy the taste, if not leave it out
  • dash red pepper flakes or cayenne pepper if you enjoy spicy
  • 1 cup black beans drained and rinsed (or more)
  • 4 eggs
  • fresh parsley or basil for garnish
  • ½ cup Feta cheese crumbled

Instructions

  • In a skillet, sauté onions for 2 minutes, add in garlic and sauté for 1 minute more. Just until the garlic is fragrant but not browned.
  • Add in the sauce and seasonings, stir to combine.
  • Bring to a low simmer, reduce heat and add in beans.
  • Fry your eggs sunny-side up, season them and top the sauce with the eggs alternately you can also slide your eggs into the sauce one by one, season cover with a lid and simmer until cooked to your liking.
  • Top with Feta and parsley or basil and serve with warm crusty bread.

Notes

Add in toast or crunch crusty bread to dip into the eggs and beans and sauce and you'll be doing the happy food dance!
