Ingredients

  • 4 large Boneless Chicken breasts
  • cup Rub (my favorites are McCormicks Sweet & Smokey or The Spice House Bronzeville Rub or see notes for a homemade version. or more
  • 18 strips Bacon just an estimate. Will depend on type of bacon and size of chicken pieces and if you want to use a half piece bacon per or a whole piece of bacon per chicken piece.
  • 1 cup Barbecue sauce Homemade or store bought

Instructions

  • Cut your chicken into 1 inch or so chunks and then season with your rub
  • Cut your bacon strips in half and then wrap one around each chicken piece. If you bacon is small or very thin, or your chicken pieces are larger, you may want to use a whole piece of bacon.
  • Skewer like-sized bacon-wrapped chicken chunks onto the same skewers, leaving a small space between each one. (If you smush them all together, they will not cook as even).
  • Season bacon wrapped onto chicken with some of the rub as well.
  • Heat your grill (make sure its been brushed clean and oiled before turning it on) over med-high heat. Flip after 3-4 minutes (bacon will be ready to release when cooked).
  • Brush/baste the cooked side with BBQ sauce. After another 3-4 minutes, flip again and baste that side with sauce. Another minute or so and they should be done. It all depends on the thickness of your chicken and your bacon.
  • Allow to rest for a few minutes and then either serve whole skewers or use a fork and pull individual bundles from skewers to a platter. Serve with extra BBQ sauce on side.

Notes

I feel that Oscar Mayer Bacon or Hatfield are the best for grilling,  not too thick and crisps up perfectly without the meat over cooking. Use your favorite bacon brand where you live.
You do not have to season your bacon with a rub of some sort, however its nice flavor if you do. Use your fingers to rub it into the bacon.
Nutritional info will vary by which BBQ sauce used, which rub as well as how much of each used in the end. 
Make your own sweet and spicy rub by combining Kosher salt, brown sugar, black pepper, paprika, nutmeg, chili powder, onion powder and garlic powder. For extra kick add a couple shake cayenne.
½ TBS salt
½ TBS chili powder, garlic powder and onion powder 
A shake or two of paprika 
add in a couple shakes of cayenne for extra heat.
