When ready to assemble the vodka coolers, first you want to supreme the limes. Like I described above. Once you have your limes cut into segments, place 2-3 segments in each glass and muddle them (with a muddler or wooden spoon). Get them all broken down, so you have pulp floating around your cocktail, yum! OR you can just squeeze them if you don't enjoy the pulp.
Fill the glass with as much ice as you like, then vodka, then simple syrup (ratio will depend on the size glass you use and your preference for sweet).
Top with seltzer or club, garnish with a lime slice and maybe a few thin shards of lime peel in the glass or a lime wedge and enjoy!!

Simple Syrup Recipe combine 1 cup of sugar and 1 cup of water in a small pot and heat just until sugar is fully melted when stirred. Heat the mixture just until all sugar is melted (no granules remain) and liquid is cloudy-clear, Do not let it boil. Cool completely. Store in a mason jar for up to a month in your fridge.It's a 1:1 ratio of sugar and water so if you want to make a smaller batch or a larger batch its easy to do so.You can also flavor your simple syrup with fresh lime juice (or any other fruit flavor you'd enjoy). A Flavored simple syrup will keep 1-2 weeks in the fridge. Just swap out some of the water (½ cup) for the fresh lime juice. So that means ½ cup water, ½ cup fresh lime juice and 1 cup sugar.
