Sausage Stuffed Peppers. Chicken Sausage Pepper Rings - Mini peppers sliced & stuffed with sausage. Sausage Stuffed Peppers Rings can be made full size or mini. Use any sausage you enjoy.

- 1 pound Chicken Sausage whatever flavor you enjoy or use pork sausage.
- 1 package Prepackaged Mini peppers, pre sliced peppers or Farms or small whole peppers for you to slice down
- 1 TBS avocado or olive oil, more as needed
- salt and pepper
Remove casings from your sausage and break sausage apart with your clean hands, a spoon or a spatula.
Slice down your peppers into ¼ inch thick rings or use pre-sliced pepper rings.
Stuff your peppers with the chicken. Press firmly to mold the chicken sausage into each ring. Get as much as you can into each ring, packing it down like making a snowball.
Heat a small amount of oil (about 1 TBS) in your nonstick pan, add the stuffed peppers and sauté until cooked through, flipping once. Remember, chicken sausage cooks through quicker than pork sausage, be careful to not dry it out.
Serve or cool, refrigerate and pack in your kids lunches.

Brands like Hatfield sell 1 pound packages of loose pork sausage. I often buy their sweet, hot or chorizo for these stuffed peppers as well.
