Ingredients

  • 3 cups powdered sugar
  • ½ cup cocoa powder
  • ¼ teaspoon salt
  • 2 large egg whites room temperature
  • 1 TBS vanilla
  • ½ cup chocolate chips
  • 1 teaspoon cayenne "red" pepper add at least ½ tsp, the more pepper the spicier the cookie...yum
  • Optional 1 teaspoon baking soda for larger, thinner, crisper cookies

Instructions

  • Combine all ingredients in your mixing bowl and mix well until all ingredients are incorporated.
  • Refrigerate for 30 minutes.
  • When ready to bake, preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Spray a cookie scoop or tablespoon. This batter spreads out, so you only want each cookie to have 1 TBS or so of batter unless you want to make these large. If so use full cookie scoop or 2 TBS and only bake about 5 at a time on a parchment paper lined sheet, spread out.
  • Bake cookies for 11-12 minutes or until tops are cracked.
  • Allow to set for a few minutes, transfer to cooling rack. When completely cooled place in cookie jar or sir tight container.

Notes

The more red pepper you add, the spicier the cookie will be.  Taste the batter after a few sprinkles a of red pepper have been added in, if you feel a little heat after a few seconds and you like it, fine...if you want more (like we do) keep adding!  
You can sub dark cocoa powder for traditional for a dark chocolate flavor.
Optional: Adding ¾ teaspoon baking soda will make these cookies puff up and spread out more, like a meringue cookie or cloud bread making a thinner but larger cookie. Equally tasty. Be sure that if you do add baking soda you only put about 5 cookies per tray on parchment paper spread out.
