- 4 pounds stone crab claws
- ice
- meted butter or mustard sauce (bee below)
Mustard Sauce
- ½ cup good quality mayo
- 1 TBS Dijon mustard You can also use Colemans mustard powder to taste
- couple shakes of Tabasco
- shake or two of worcestershire
- ½ TBS fresh lemon juice
- optional added S&P, some like to add horseradish as well, I prefer it without
Store your claws in the coldest part of your refrigerator until ready to enjoy (same day or 1-2 days after purchase/delivery)
When ready to serve them, place them atop a bowl or tray of ice to keep them cold.
Combine mustard sauce ingredients, taste and adjust.
Serve with melted butter and / or mustard sauce & enjoy!
Typically 2 pounds per person is a good serving, less if being served as an appetizer offering with other things.
The number of claws needed will be based off of if you are enjoying medium, large, jumbo, colossal, or mega colossal size.
Stone crab claws have a good amount of meat on each claw.
Use a wood mallet (often comes with an order) or the back of a large spoon for cracking claws open .
