    Fall Chex Mix

    As promised take a look at what I did with some of the Honey Roasted Pepita's & Sunflower Seeds I posted yesterday.  they were delicious on their own but I thought my kids would like them more jazze up a bit.

    My son went CRAZY over this!  It is crunchy & kinda nutty...the sweet kick from the cranberries and chocolate drizzle are wonderful!  Overall I give 2 thumbs up for a snack!

    My sons' 12 year old birthday party is this Saturday and he says this MUST be a part of it!!  Looks like I am making a BIG batch of this again tomorrow!!

    Feel free to add in what you want like some orange, brown and red M&M's, nuts or other dried fruits.

    I kept it simple.  My kids are allergic to peanuts and tree nuts but seeds they are ok with, thank goodness.  I like the powerful pack of nutrients both seeds give this snack.

     Fall Chex Mix - Chex Mix with Pumpkin Seeds & Sunflower Seeds


    1 cup of Honey Roasted Pepita's & Sunflower Seeds - recipe here
    4 cups Chex (I used Corn Chex)
    ¾ cup dried cranberries
    6 TBS brown sugar
    3 TBS butter
    1 TBS corn syrup
    ½ teaspoon baking soda
    1 cup white chocolate melting discs

    Line a baking sheet with parchment paper.  Place your Chex and Honey Roasted Pepita's & Sunflower Seeds in a big bowl, toss.  Set aside.
    In a small pot bring brown sugar, butter, corn syrup and baking soda to a boil. Stirring often.  Drizzle the hot mixture over your Chex mixture, quickly but gently tossing with a silicone spatula as you go.  Turn it out onto the parchment paper lined baking sheet. Melt the white chocolate and drizzle over the mix.  Allow it to cool completely (pop it in the fridge or cold garage if you are in a hurry to eat it).  Break apart and enjoy.

    Colleen's Notes:  I have found that this does not stay perfectly crisp in a plastic baggie for more than a day.  However when I place it in one of my glass cookie jars it stays crisp for days. Feel free to add in what you want like some orange, brown and red M&M's, nuts, candy corn or other dried fruits.

    If you want to make this sweeter with more candy-like coating, just double the amount of brown sugar, butter, corn syrup and baking soda.

      i never have chex in the house to make chex mix because the kids eat it so fast. this looks good

      I love this stuff. Kids can't eat, but I sure can. Although they do have gluten free Chex, don't they? Then I'd just have to sub the white chocolate and corn syrup, hm.... 🙂
