    Mashed Potato Pie - Best use of leftover potatoes ever!
    Are you ready for the best savory pie?? This Mashed Potato Pie is so good, you won't wait for leftover potatoes to make it!

    Once I became a mom and my first child got to the point where he enjoyed the food I started to get excited by fun food for kids.  Years ago, thinking of an appetizer I had at Pizzeria Uno, you know the one...a mini pizza pie with mashed potatoes...I decided to whip up a Mashed Potato Pie and see what he thought about it.  He loved it and since then I make it once or twice a year.  (You know us adults love this too, lol)

    Now that my kids are confident kitchen helpers, they take the lead on this and so many dishes we enjoy at home.

    Who doesn't looooove potatoes???  Potatoes and cheese!!!  Or Pizza dough??? 

    And BACON!! Don't forget the BACON!! Repeat after me... " I will make this Mashed Potato Pie immediately!"

    Mashed Potato Pie

    Recipe for Mashed Potato Pie similar to Pizzaria Uno's Potato Skins Appetizer. So good and a perfect way to use up leftover mashed potatoes.

    Ingredients
      

    • Pizza Dough for 1 pie
    • 8 strips of bacon
    • 3 large potatoes peeled and quartered (or 5 good-
    • sized red bliss potatoes)
    • 2 cups shredded cheddar cheese
    • 4 TBS melted butter
    • ½ cup milk
    • 1 teaspoon salt more or less to taste
    • Black pepper to taste
    • Optional: Chopped chives or scallions and sour crean

    Instructions
     

    • Make or purchase from a pizza place your pizza dough.
    • Use leftover mashed potatoes or boil the potatoes in salted water for 20 minutes or until tender and ready to mash. Drain.
    • While the potatoes are cooking, cook your bacon until crispy, when the bacon cools, crumble and set aside.
    • In a lightly greased round baking dish, pie or cake pan (6-8 inches in diameter, no more than 2 inches deep) spread the pizza dough evenly going up the sides of the dish at least halfway.
    • Mash your potatoes while adding in your butter, milk, salt and pepper.
    • Spread mashed potatoes over the dough, sprinkle with half the cheese and bake for 15 20 minutes at 400 degrees.
    • Pull it out, add the rest of the cheese and the bacon and put back in the oven just until the cheese melts. Top with whatever else you enjoy and serve after it rests for 5 minutes or so to firm up a bit.

    Notes

    Notes:  Make sure your potatoes are not runny, you need them to hold up after slicing the pie.  The amount of milk added will vary by the size of potatoes you use.  Think rich and flavorful potatoes.  Often I double the recipe and make a deeper pie. Serve with Sour cream (or drizzle the pie with sour cream for a pretty presentation.
    You can sprinkle cheese on the crust (season crust with salt and pepper too). You can add cheese to the potatoes as well and mix in. No rules here, just make it how you would enjoy.
    You may have extra dough if making the above recipe...if so, save it and make stuffed pizza balls....the kids seem to love those!  Just stuff them with pepperoni and mozzarella bake them on parchment until golden and dip in pizza sauce.

      This dish reminded me when I was a young teen my parents spent 2 years in Tunisia. Our cook smashed potatoes in a casserole dish with lots of kale cooked with ground meat mixed in, baked uncovered until crusty top. No dairy was used but darn it was good! Gotta try your pue!!
