Ingredients
- Coarse salt (kosher or sea salt)
- Fresh Rosemary
- Optional: Lemon or lime peel
How to make Rosemary Salt
- Remove rosemary from stem and give it a rough chop.
- Combine salt and rosemary in your food processor and give it a good whirl until rosemary is minced and mixture is blended (this will result in a finger grind). For a coarser salt, pule rosemary first then add salt and give it a small pulse.
- If adding lemon or lime peel in, first pulse lemon peel and rosemary then add salt in for a quick pulse.
- Turn mixture out onto a parchment paper lined baking sheet and allow it to sit out overnight. OR to speed things up. Preheat your oven to 200. Turn it off and place your baking sheet with salt mixture into oven, close door and allow it to sit there overnight. This is especially efficient if adding fresh lemon peel.
Tips
- If it's a humid or damp day, the oven method works best.
- If you don't have a food processor, you can mince rosemary (and lemon/lime peel if using) and mince it as fine as you can get it.
- Decide how course or fine you want your Rosemary Salt to be. For coarser salt, first place rosemary (and lemon/lime peel strips if using) in your food processor or high powdered blender to get them finely ground. Toss with salt or add salt and give it a quick pulse till combined.
- For finer salt, add all together and pulse till fine.
Variations
- Add in garlic powder or dried garlic for Rosemary garlic salt.
- Add a 1 TBS minced lemon peel for Rosemary lemon salt.
