Spicy Avocado Soup with Roasted Corn

This Avocado Soup hits the spot on a warm day. It's creamy, delicious and different. Make this Avocado Cucumber Soup spicy, as I do, or not. It's a perfect summer soup recipe celebrating avocado, cucumber and corn.

This Spicy Avocado Cucumber Soup with Roasted Corn is easy to make and good for you too! Other than grilling (or sautรฉing) the corn, this is a no cook soup.

This cold Avocado Soup would be a great bridal shower recipe or baby shower recipe. Serve it in cute shooter cups on a platter or elevated serving station as part of a buffet.

The first cold soup I had years and years ago threw me for a loop. Since then, I've opened my mind a to what a soup can be and now enjoy cold soup recipes as well as hot. I especially love this Tomato Detox Soup at room temperature.

You can decide to make this Avocado Soup as thick and creamy or as thin as you like. I enjoyed it on the thicker side. Pile on the pan roasted or grilled corn, a handful of sesame seeds and you are in business!

This is a fantastic and creative vegetarian soup as well as a gluten free one.

Ingredients Needed

  • Fresh Ingredients - Avocados, jalapeno, cucumber, garlic, lime, corn (however good white frozen corn will work) and (optional) cilantro & scallions or chives.
  • Pantry staples - S&P, Greek yogurt, cayenne pepper, sunflower seeds or pepita seeds.

 Avocado Soup Variations

  • I like making this avocado cucumber soup spicy as directed below in the recipe card. However if spicy is not your thing, leave out the jalapeno and the cayenne pepper (or just use a little).
  • If you enjoy cilantro (I sure do), add in a handful of leaves with the avocado and pulse. It will add a lovely fresh flavor. Yu can also use some as garnish.
  • If you want to add some meat to this, crispy bacon or pancetta on top with the corn (or in place of it) is delicious.
  • If you enjoy the flavor of cumin, add some of that in.
  • Quality frozen white corn can be used in place of fresh.

Tip: Cucumbers will have different water content. So, if you feel your soup is too thick, add in a few TBS of water to get it to the consistency you enjoy.

Ingredients
  

  • 1 jalapeno seeded and cut into 4 pieces
  • 2 cloves garlic
  • 1 ยฝ ripe avocados halved and pitted
  • 2 cups chopped cucumbers
  • 6 ounces of plain Greek yogurt
  • ยฝ cup light cream
  • 1 teaspoon to ยฝ TBS Kosher salt to taste
  • ยผ teaspoon black pepper
  • Pinch - ยผ teaspoon red pepper or more
  • Squeeze of fresh lime juice or fresh lemon juice
  • Optional: Cilantro*
  • Topping
  • 2 ears of corn
  • 2 TBS sunflower seeds or pepita's
  • 3 TBS chopped scallions or chives

Instructions
 

  • Pules your jalapeno & garlic in your food processor a few times (and if using cilantro leaves add them here as well).
  • Add in the cucumbers and avocado, pulse a few times.
  • Add in the yogurt and cream and process until smooth.
  • Add in salt, pepper, lime juice, pulse until smooth.
  • Taste and adjust for heat and seasonings.
  • Also adjust for consistency as some cucumbers will have a higher water content than others. If too thick for your liking, add in a couple TBS of water and pulse until smooth.
  • For toppings, cut kernels off of a fresh cob or two of corn and sautรฉ in a little melted butter until they begin to brown. Season with Old Bay, Cajun seasoning or salt & pepper.
  • Top each soup serving with corn, sunflower seeds and a pinch of sliced scallions and serve.

Notes

If you enjoy cilantro (I do...my husband doesย  not), add a handful of leaves to your soup when you pulse the garlic & jalapenos to give it that fresh taste that only cilantro can lend. OR simply use some as a garnish.
If you really want some heat, leave some of the jalapeno seeds in ๐Ÿ™‚
