    If you are looking for a grilled potatoes recipe, this is it! If you are looking for grilling sides or chicken or beef, this recipes is perfect! grilled side dishes for chicken. This girl loves a good potato salad recipe with all the fixings however there is something to be said for a lighter potato salad.

    Grilled potato slices are delish and the rest of the ingredients put it over the top. Don't be shy...go back for seconds!! This Grilled Potato Salad will hold up in the summer heat. No mayonnaise to worry about and its easy to customize.

    Ingredients

    • Potatoes
    • Vidalia onions
    • Avocado/olive oil
    • Garlic 
    • S&P
    • Jalapenos
    • Bacon
    • Parmesan cheese
    • Fresh Parsley

    Variations

    • Feel free to add red pepper flakes for more heat, extra bacon or crispy pancetta or prosciutto to these grilled potatoes.
    • You can change up the cheese used (imagine melty raclette cheese overtop?? YUM).
    • Use a medley of colored potatoes to for an even prettier platter. Swap the jalapenos for poblanos or roasted peppers.
    • Drizzle with a chili oil, caramelize the onions first. Change this up any way you can think of, it will work

    Tips for Grilled Potato Salad

    • Use large potatoes for this or for the easiest preparation, use those pre-cleaned potatoes in the bags (any variety or a combo). You just have to love how clean they are and ready to go straight out of the bag. Those can be microwaved for a few minutes to partially cook.
    • If using large whole potatos, to partially cook you can either bol for a few minutes or microwave.
    • You want to start the cooking process on the potatoes before grilling or else it will take quite a while on the grill. Plus this is the best eating experience in my opinion.

    I happen to be a fan of leaving skins on potatoes. No its not because I am lazy, lol! I like the texture and the extra nutrients found in skins are great!

    A platter of Grilled Potato Salad makes for a colorful, pretty addition to any meal or BBQ. Use whatever potatoes you enjoy.

    Grilled Potato Salad with Bacon & Jalapenos

    This Grilled Potatoes recipe layered with sautéed or grilled sweet onions, a simple flavorful garlic oil, thin slices of jalapeno, fresh shaved Parmesan, herbs and bacon make for a fantastic and easy side dish. And on a platter it looks impressive.

    Ingredients
      

    • 2 pounds potatoes
    • 1 -2 large red or Vidialia onions
    • 1 cup avocado or olive oil
    • 4-5 big cloves garlic minced
    • Kosher salt & black pepper
    • 2 jalapenos
    • 8 slices crispy bacon
    • Wedge of Parmesan cheese
    • Fresh Parsley

    Instructions
     

    • Combine oil, garlic, salt & pepper Season it to your liking) in a mason jar and allow it to "steep" for 30 minutes to an hour.
    • Microwave your scrubbed potatoes for 3-4 minutes to get them started
    • You want them to be partially cooked, not soft by any means, just not rock hard.
    • Allow them to cool and then slice into rounds, placing them on a baking sheet as you do.
    • Slice your onion(s) into halves, thick slices or chunks (all depends on your choice of potato, I used fingerling and red for mine) and do the same.
    • Brush both potatoes and onions with your garlic oil, and then sprinkle with some additional salt and pepper (you can add smokey Paprika as well if you like).
    • Get your potatoes started on the hot oiled grill and then and onions, turning once (with tongs or a spatula and (brushing with the oil before you turn) until done.
    • Remove potatoes and onions from grill, brush with more oil and assemble salad by adding in (layering or placing on a platter) the jalapenos, bacon Parmesan and parsley (don't be shy with those...go big!).
    • Drizzle the remaining oil over-top (as much as you might enjoy), sprinkle with seasoning and enjoy warm or at room temperature.
