Why you'll love this cold shrimp appetizer
- When it comes to summer shrimp recipes, this pickled shrimp tops the list for me. It's served ice cold, which is amazing on a warm day.
- Its a light summer recipe.
- It's so easy to make.
- You make it ahead of time and when you are ready, pull it out of the fridge and serve.
Pickled Shrimp Ingredients
- Large cooked shrimp
- Avocado or olive oil
- Apple cider vinegar
- Capers, sweet onion, lemon
- Celery seed, sugar & salt
- Tabasco
Instructions
- Combine oil, vinegar, capers, sugar, celery seed, sugar and salt in a large jar or bowl. Whisk until incorporated.
- Layer in shrimp, onions, lemon slices, repeat. Press down to ensure everything is covered with the liquid.
- Marinate overnight or for a minimum of 6 hours, moving everything around occasionally.
Variations
- If you want this on the spicy side, add in more red pepper flakes OR a heaping spoonful (or two) of chili with garlic sauce.
- Add in some thinly sliced jalapenos for a different sort of heat.
- Switch yellow onions for red onions.
- Add in thinly sliced cucumbers to stretch it a bit (plus they are yummy in the marinade)
- Add in Old Bay, Cajun or Creole seasoning for a different sort of flavor.
Tips
- Use the largest or second largest shrimp available to you. (Makes for easier enjoyment)
- Wash your lemons before slicing and adding to the brine (after all the skins will be in the brine so you want them clean).
- Serve over a bowl of ice. Place your serving bowl or wide-mouth jar over a big bowl of ice to keep this as cold as you can.
- If its a hot day and you'll be serving outdoors, place in freezer 30 minutes before serving. This will help keep them at their peak coldness for cool enjoyment.
I always say shrimp is my favorite food its between that and pork belly, lol. Shrimp is just so versatile. I hope you enjoy this Southern Pickled Shrimp recipe! It tops my list of summer appetizers for sure.
