Beef has been on the pricier side lately, so a delicious way to stretch your steak is by making Steak Bites with Gnocchi. It's a robust meal that explodes with flavor!

I make a ton of things from scratch. However, when it comes to gnocchi, I buy it. It's just as tasty in my opinion as homemade and man, you sure can you make something tasty with it fast! I prefer to use mini potato gnocchi, however you can use whichever style you and your family enjoy.
I typically use DELALLO Mini Potato Gnocchi for this recipe (it's in a box in the pasta aisle and cooks in minutes). It never disappoints! I actually swear by their products in general, they are just so good!
We do love beef for dinner in a variety of ways like our favorites Guinness Stew, Shredded Beef Enchiladas, and Finger Steaks which use more economical cuts of beef. However, sometimes we treat ourselves to a nice cut of beef like a whole roasted beef tenderloin or really thick ribeye steaks. Mmmm-mm!
Making Beef Tips with Gnocchi or beef tips with mushrooms is a great way to stretch a nice cut of beef. Plus, whether you use gnocchi or mushrooms, this is a 20 minute meal you'll feel good about.

Variations
- Keep these simple as just seasoned steak bites with garlic butter or add additional herbs and spices to flavor it as you prefer. If you want some heat, add in red pepper flakes or slices of jalapeno or whichever spicy pepper you have on hand.
- You can add sliced peppers to this if you enjoy peppers.
- Add mushrooms to the pan or leave out the gnocchi and make steak bites with mushrooms instead. Same idea. I would take the steak out of the pan along with most of the liquid. Toss in your mushrooms with a nob of butter and some Worcestershire sauce and cook them on high heat until they are browned in spots. Place steak back in pan, toss well, garnish with fresh thyme, parsley or what you prefer and serve.
- I like to use beef tenderloin for this special treat, however sirloin will work too. Sometimes at farmers markets they sell beef tenderloin "tails" for a lower price. The "tails" are the thinner ends of a whole beef tenderloin that they often cut off. I scoop up a few of those and make this. OR when I buy a 4-5 pound whole fillet. I'll cut thick steaks from it o freeze and leave the thinner area for making beef tips.
- Sometimes I simply season the steak chunks with Cajun or blackening seasoning for a different flavor.
Tips
- Get everything in place before you begin cooking as this moves fast. Have your seasoning mix done, salted water in a pot for the gnocchi, slotted spoon or strainer to remove gnocchi, pan for the beef and the rest of the ingredients ready to go.
- Pat your meat dry before cutting and again after cutting. This will help a crust develop.
- Try your best to cut steak into similar sized chunks for even cooking.
- A cast iron pan is fabulous for making Steak Bites. Just be sure whichever pan you use its a big one so that the steak isn't too crowded, allowing an even cook and nice browning.
- If using a tougher cut of beef (which is fine) I suggest marinating it overnight or for a few hours, here's my favorite steak marinade recipe.
- I like to remove the steak to a platter or large bowl and then place the gnocchi into the hot pan. That way the gnocchi can get browned in spots.
- Don't overcook the steak chunks, they will cook quickly and continue to cook as they rest while you sauté the gnocchi. I always say a little under is better than over, as you can fix under 🙂
- Undercook your gnocchi by a minute or two, it will finish cooking in the pan.
Serve this Steak Bites recipe with some fresh Skillet Corn, a nice Caesar Salad or your favorite green vegetable.
If you are a steak and potatoes person, this is a twist on the same! It's steak bites and potatoes except the potatoes are in the form of potato gnocchi. SO fun & ridiculously flavorful!

Ingredients
Seasoning
- ¾ TBS Kosher salt more or less to taste
- 1 teaspoon pepper
- ½ TBS onion powder
- ½ TBS Italian seasoning
- ½ TBS smoked paprika
- ½ an onion chopped (I like Vidalia but anything works)
- 1 ½ pounds beef tenderloin, cut into bite sized chunks or more
- garlic paste If you don't have garlic paste or don't want to make it from fresh cloves. Just add some garlic powder to your seasoning.
- ½ TBS butter more if needed
- Avocado or olive oil for cooking
- 1 TBS chopped garlic
- 16 oz box DELLANO (or similar) potato gnocchi
Instructions
- Make your seasoning blend by combining salt, pepper, onion powder, Italian seasoning and paprika. Stir or until combined. Set aside.
- Pat steak dry. Cut your steak into similar size chunks, pat dry again and allow to sit for 15 minutes to let the chill come off for more even cooking.
- Get a pot full of water, salt it well and turn on high.
- Season steak chunks, tossing to coat evenly. Add in garlic pasta (or the powder) and toss till incorporated. Alternately, you can also run the steak down with the paste before seasoning.
- Heat a large skillet / pan with sides, add in oil and butter and once hot, add in onions and sauté for 1-2 minutes, push to one side and add in steak chunks, allowing some space in between so they sear vs steam.
- Add a few splashes of Worcestershire and the garlic.
- Simultaneously, drop gnocchi in the boiling water water and cook according to package instructions, pulling a minute or two before recommended.
- Once steak is med-rare, med (it won't take long as long as you are not cooking the steak straight from the fridge) or done to your liking remove the steak bites & onions and transfer to a plate or container.
- Dump gnocchi into pan, add a little nob of butter and cook for 1 minute or so, add in any fresh herbs you feel like or scallions (or not) add steak and onion back in and remove from heat, toss well and scrape out mixture into a serving dish or platter. Garnish with fresh parsley or whatever fresh herbs you like and dig in.
