  • Butter
  • Halibut
  • Fresh lime
  • S&P, Paprika
  • Grapeseed or olive oil
  • Fresh garlic & Ginger (or pastes)
  • Parsley
  • Vidalia onion
  • Thai Red Curry Paste
  • Tomato Paste
  • White wine
  • Coconut milk
  • Brown sugar
  • Diced red pepper

Tips for success

  • While this does have more ingredients than most of my recipes, this a really easy dish to make and SO worth it.
  • Make sure you marinate the fish for at least 15 minutes.ย 
  • Handle the fish with gentle hands so it does not break apart. 
  • Use a nonstick pan
  • Flip gently

Ingredients
  

  • 3 TBS butter
  • 4 - 4 ounce portions of fresh Halibut
  • Lime zest
  • Kosher salt
  • Black pepper
  • Paprika
  • Grapeseed or olive oil
  • Sauce
  • 3 cloves garlic
  • 1 TBS fresh ginger
  • 2 TBS parsley
  • ยผ cup Vidalia onion
  • 3 TBS lime juice
  • Salt & pepper
  • 2-3 TBS Thai Red Curry Paste
  • 3 TBS Tomato Paste
  • ยพ cup white wine
  • 1 cup coconut milk
  • 1 TBS brown sugar
  • 3 TBS diced red pepper not spicy

Instructions
 

  • Season Halibut with lime zest, salt, pepper and paprika. Set aside to marinate for 15 minutes.
  • In your food processor, process your garlic, ginger, onion and lime juice until smooth or finely minced. This could pose a challenge for large processors, since its a small amount of ingredients. If so, do it by hand then add in the lime juice.
  • Melt butter in a non-stick skillet or frying pan. Over med-high heat, pan sear the halibut, about 2-3 minutes per side until cooked through. (Cook time will vary based on the thickness of your fish).
  • Carefully place fish on a baking sheet or plate tented with foil.
  • In the same pan, add your mixture from the food processor and saute for 4 minutes. If you need to add a smidge more butter, do so.
  • Add in your Thai red curry paste and tomato paste, blend well and saute for 3 minutes.
  • Add in the wine and stir briskly, once its simmering add in the coconut milk, sugar and some salt & pepper.
  • Stir, taste and adjust seasoning or heat if necessary. If you would like it spicier, add in a pinch or two of Cayenne pepper.
  • Simmer for 10 minutes.
  • Remove from heat.
  • Place the fish gently into the pan of sauce, allow it to sit for a minute or two and serve.
  • OR plate the fish and spoon the sauce around it.
  • Enjoy!

Notes

This will serve 4 as 4 oz portions or 2 as 8 oz portions...It's SO good...that you are going to want 8 ounces, trust me!

    That recipe sounds amazing. If we were to win, we would order crabs and crawfish along with mackerel.

The first thing I would try from FultonFishMarket.com would be their oysters because I want to enjoy them raw and the fish at the supermarket doesn't look like it's being purchased by shoppers but rather like it's just sitting there waiting for someone to buy it so it doesn't seem as fresh as I'd wish it were.

    Based on the time of year, I'm all about fresh oysters right now. The East Coast / West Coast Oyster Special (2 Dozen) sounds AMAZING!

    Super delicious! Love how much thicker the sauce is and deeper flavored it is than any other recipe I've used.
    I'm not seeing where the parsley and the diced red pepper ingredients come into play in the full recipe. I added the parsley with the garlic/ginger/onion/lime juice mix and the diced red pepper at the end. But you may want to update your recipe! I also only had green curry paste and it was great!

  13. Colleen, I am inspired by this recipe as my husband and I are striving to eat fish more often. But, looking at the Fulton Fish Market prices, I wonder how many of your followers can actually afford to order 2 x 5-7oz Portions of Halibut (regular cut) for $46.99 ($75 minimum order, so I added 1 doz oysters) + $35 shipping, for a whopping total of $111.47? It would certainly be a rare treat for most of us.

I consider it a treat to occasional indulge in high quality seafood and meat purchases vs going out to dinner. Sourcing your fish from any online or in person market that you enjoy will result in the same taste as this recipe describes. Good luck with adding more fish to your meal plan!

    I made a few adjustments such as adding cilantro and lime zest. I also used a different technique and cooked the fish last as halibut is very sensitive to overcooking while sitting. The recipe is fantastic and yields a beautiful nice deep red curry with layers of flavor.
