Grilled Flat Iron Steak is a nice cut of steak to choose vs what cut of steak you may normally pick up.
This simple & delicious flat iron steak recipe is made using my go-to grilling marinade. This simple marinade is delicious with flank steak, sirloin steak, top round steak or London broil. This same marinade also works well with chicken, beef, pork tuna and veggies. It gives great flavor to all of these. I especially like using it for grilling kebabs.
You can boil the marinade after removing the steak and serve it alongside the steak as well. Bring it to a boil for a few minutes to kill any bacteria from the raw meat. Or you can make a smaller separate batch of the marinade exclusively for using after the steak has been cooked.

What is Flat Iron Steak?
- Also referred to as top blade steak, flat iron steak, is a cut of beef from the shoulder region (the chuck). Flat iron steak has rich flavor and tenderness, which is the result of it being cut away from the connective tissue within the shoulder. it's name comes from its flat shape, which resembles an old-fashioned flat iron.
- Flat iron steaks used to only really be found on steak house restaurant menus since it was extra work for butchers to remove the tough piece of connective tissue that runs through the middle of it. However, improved butchering techniques and its rise in popularity have made this steak more accessible to home cooks.
- Individual cuts weight about 8-12 ounces each. A whole top blade sut weights 2-3 pounds (as pictured here).
- Flat iron steak is versatile. You can grill, broil, pan sear.
- Flat iron steak offers a great balance between cost and quality, making it a favorite for both home cooks and chefs.
How to cook Flat Iron Steak
- Choose to marinate or season.
- Choose to pan fry or grill.
- When ready to cook, pat dry allow meat to come up to room temperature for 30 minutes and cook on a hot grill or very hot pan with a little avocado or olive oil.
- In a pan be sure to get a good sear on both sides add a nob of butter and baste till done to your liking (or finish in oven).
- On grill, cook 4-5 minutes per side or until it reaches your desired temperature.
- Once the steak reaches your desired level of doneness (use a meat thermometer: I like 130°F for medium-rare). After removing the steak from the pan or grill. Let it rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute throughout the meat.
Tips
- Marinating the steak can enhance its taste, but it's actually flavorful enough on its own due to the fat marbling.
- Cook flatiron steak to medium-rare or medium to fully enjoy its natural tenderness and flavor.
- Make sure grill grates have been cleaned and oiled before heating the grill.
- Use a meat thermometer for accurate temperature readings

- Rare 120°F-125°F
- Medium Rare 130°F-135°F
- Medium 140°F-145°F
- Medium Well 150°F-155°F
- Well Done 160°F+ (please no, lol!)

Grilled Flat Iron Steak
Ingredients
- 1 flat iron steak
- 1 cup soy sauce
- ¼ cup Worcestershire sauce
- 2 TBS sherry
- 5 big cloves of garlic smashed
- salt and pepper
- scallions for garnish (optional)
Instructions
- Combine all ingredients and let meat marinate for 2 hours to overnight in the fridge.
- Remove steak from marinade, blot it dry.
- Clean & oil your grill, Preheat it to high. Cook your steak 4-5 minutes a side or until done to your liking.
- Optional - Heat the leftover marinade in a small pot until it comes to a boil and serve alongside the steak. Garnish with snipped chives, scallions or herbs and serve.
