One of my favorite things to make with leftover mashed potatoes is this Mashed Potato Pizza. It is SO good that you end up making mashed potatoes just to make this!

Are you ready for the most fun and tasty savory pie recipe?? This Mashed Potato Pie will get everyone excited!
Once I became a mom and my first child got to the point where he enjoyed the food, I started to get excited by making fn and interesting food for hime to try.
Years ago, thinking of an appetizer I had at Pizzeria Uno, you know the one, a mini pizza pie with mashed potatoes. The call it Pizza Skins. It was love at first bite!
I decided to whip up a Mashed Potato Pizza myself and see what he thought about it. Connor loved it and since then I make it once or twice a year.
Adults also go crazy for this Pizza Skins recipe as well!
This simple recipe is a fabulous way to use up leftover mashed potatoes! All you need to add is a pizza crust, cheese and a few additional toppings and you are set!
Now that my kids are confident kitchen helpers, they take the lead on this and so many dishes we enjoy at home.
Ingredients Needed
- Pizza Dough (for 1 pie)
- Bacon
- Leftover mashed potatoes or fresh made mashed potatoes
- Shredded cheddar cheese
- Butter
- S&P
- Toppings: Chopped chives or scallions and sour cream

Who doesn't love potatoes?? Potatoes and cheese!!! Or Pizza dough?? And BACON!! Don't forget the BACON!! Repeat after me... " I will make this Mashed Potato Pie immediately!" It hits all the notes!
Tip: Purchase your pizza dough from your local pizza shop. That way, you support a local business that I am sure helps with many fundraisers and team sports in town, PLUS they make it all day, every day! Better than we can! It's pretty inexpensive as well without unnessary preservatives, etc.
Mashed Potato Pizza Variations
- Use leftover mashed potatoes or make them fresh just for this. You can even use store-bought (your secret is safe with me).
- Add sour cream to your potatoes or serve some on the side.
- Make vegetarian by omitting the bacon or use an alternative bacon like turkey bacon.
- Top with whatever else you feel you will enjoy and feel free to change up your potato mixture to Colcannon (which are Irish Mashed Potatoes...that would be so good!!) or whichever variation you enjoy most.

Mashed Potato Pizza
Ingredients
- Pizza Dough for 1 pie
- 8 strips of bacon
- 3 large potatoes peeled and quartered (or 5 good-
- sized red bliss potatoes)
- 2 cups shredded cheddar cheese
- 4 TBS melted butter
- ½ cup milk
- 1 teaspoon salt more or less to taste
- Black pepper to taste
- Optional: Chopped chives or scallions and sour crean
Instructions
- Make or purchase from a pizza place your pizza dough.
- Use leftover mashed potatoes or boil the potatoes in salted water for 20 minutes or until tender and ready to mash. Drain.
- While the potatoes are cooking, cook your bacon until crispy, when the bacon cools, crumble and set aside.
- In a lightly greased round baking dish, pie or cake pan (6-8 inches in diameter, no more than 2 inches deep) spread the pizza dough evenly going up the sides of the dish at least halfway.
- Mash your potatoes while adding in your butter, milk, salt and pepper.
- Spread mashed potatoes over the dough, sprinkle with half the cheese and bake for 15 20 minutes at 400 degrees.
- Pull it out, add the rest of the cheese and the bacon and put back in the oven just until the cheese melts. Top with whatever else you enjoy and serve after it rests for 5 minutes or so to firm up a bit.

This dish reminded me when I was a young teen my parents spent 2 years in Tunisia. Our cook smashed potatoes in a casserole dish with lots of kale cooked with ground meat mixed in, baked uncovered until crusty top. No dairy was used but darn it was good! Gotta try your pue!!
