Perfect Summer Pasta Salad

As soon as the weather warms up a bit, one of the dishes I find myself making often is this Summer Pasta Salad with roasted tomatoes . This Bow Tie Pasta Salad is just so good! Roasting the tomatoes makes a delicious difference.

Making a simple seasoned garlic oil gives this summer side dish recipe a burst of flavor. In addition the same garlic oil recipe is amazing used on vegetables when grilling them as well as on steaks or beef tenderloin.

Bow Tie Pasta Salad Ingredients

  • bow tie pasta (or spiral)
  • olive or avocado oil
  • fresh garlic or garlic paste
  • grape tomatoes
  • arugula
  • jalapeno (optional)
  • scallions
  • pine nuts
  • seasoned salt
  • Parmesan cheese

Variations

  • Swap out ingredients or add others. Add charred peppers, cut into strips or any other roasted vegetable you enjoy.
  • You can or course slice grape tomatoes and add them however trust me, roasting them first makes all the difference.
  • Swap pine nuts for your favorite nut.
  • Swap Parmesan for Feta cheese and use Greek seasoning for a Mediterranean pasta salad.
  • Change up the seasoning.
  • Add pesto.

Vegetarian Pasta Salad Tips

  • Allow your tomatoes to cool to room temperature after roasting, then place in fridge to chill (or add to salad and chill). You can roast tomatoes a day ahead and store in fridge in a container.
  • Toast your pine nuts on either a baking sheet at 300 degrees, moving them around often and checking on them every few minutes. OR just use a small pan and toast stovetop. All you want to do is get them browned in spots.
  • Make your on seasoned salt (see notes in recipe card) or use your favorite. OR use Greek seasoning. They all work.
  • I find tossing the tomatoes, arugula, scallions, pine nuts and shredded cheese in the seasoned oil and some seasoned salt before adding them into the pasta give maximum flavor.
  • Refresh pasta salad with a nice splash of olive or avocado oil if it soaks up the moisture.

  • This easy pasta salad recipe holds up well.
  • Store leftovers in a mason jar for lunch or a sealed container in the fridge.
  • You can make it a day prior as well. For best results toss pasta with seasoning and oil and store in fridge. Add the remainder of ingredients shortly before serving, adding in additional seasoning and oil.

Perfect Summer Pasta Salad

This east to make summer Pasta Salad if full of flavor and can hold up at a BBQ or picnic. Made with a seasoned garlic oil and roasted tomatoes this simple summer side dish compliments an array of grilled meats or sandwiches.

Ingredients
  

Garlic Oil

  • ½ cup avocado oil or olive oil
  • 2 cloves garlic, minced nice big cloves or 2 TBS garlic paste
  • S&P

Pasta Salad Assembly

  • 1 pound pasta cooked to package instructions (farfalle or fusilli or you fav that does well in a pasta salad)
  • 1 pint grape tomatoes (or more)
  • ½ cup toasted pine nuts
  • 6 oz arugula (more or less)
  • 1 cup freshly shredded Parmesan cheese
  • ½ TBS more or less seasoned salt (see notes)
  • 1 jalapeno, sliced thin (optional)
  • scallions sliced thin (optional)

Notes

Use homemade seasoned salt or store bought. Salt content varies. Look for something with a number of additional spiced in it. You can also choose to use Greek seasoning for this bow tie pasta salad (Cavendar's is my fav, I am never without it!!)
To make your own seasoned salt combine:
  • 2 TBS Kosher salt
  • 2 teaspoon black pepper
  • ¾ teaspoon paprika
  • ¾ teaspoon garlic powder (you can also use dried chips for a different texture)
  • ¾ teaspoon onion powder (you can also use dried chips for a different texture)
  • a shake or two or cayenne (red ) pepper
  • Optional add in ½ teaspoon dried parsley
Add as much or as little of the tomatoes, pine nuts, arugula etc. Make this easy summer pasta salad your own.
Serves 8-10 as a side dish. 4-5 as a main dish.
