If you enjoy eating those bags of mini peppers, you will lose your mind over this mini sweet peppers recipe! Air Fryer Peppers are one of the easiest, tastiest, vegetable recipes I have ever had!

We all enjoy a good bite or a good meal, however, when that bite or meal is SO easy to make?? THAT is winning in my book!! These peppers are amazing, and so light, I have a feeling they will be your new favorite!
Air Fryer Peppers make a fabulous tapas recipe, addition to charcuterie boards or appetizer trays. Dress them up with goat cheese crumbles, feta cheese, Parmesan cheese or enjoy as-is.
I enjoy making blistered shishito peppers with goat cheese that we dip in a zingy sauce however, these Air Fryer Peppers have become my new favorite! I/we eat them 3x a week (or more).

Ingredients
- Mini sweet peppers
- Avocado or olive oil
- S&P, optional garlic powder, onion powder and/or red pepper flakes
- Fresh Parmesan cheese (optional)
Variations
- Keep these peppers simple with just oil, salt and pepper (they are delicious that way).
- Top with cheese, I usually top with freshly shredded Parmesan cheese. You can also top with goat cheese or feta cheese crumbles.
- Since these mini peppers are sweet, if you enjoy spicy, add in some red pepper flakes.
- Use a mixture of mini sweet peppers, jalapeno peppers, banana peppers or your favorite variety.
- Cover cooked peppers with oil and store in a sterilized jar in your fridge for a couple of weeks. Add in a bay leaf or two. Use as you would roasted peppers.
Tips
- Usually when air frying food, you don't want to crowd things. With these peppers you can, it won't affect their cooking. As the peppers cook, they will char and shrink down.
- Be sure to move peppers around with a spatula halfway through the cooking time and then again with a few minutes to go for even cooking and best char results.
- If making more than one batch of these air fryer peppers, remember that the second batch will cook quicker due to the air fryer being hot. So adjust cook time down by a few minutes. Just keep an eye on them.
- Personally I see no reason to cut these mini sweet peppers in half before cooking. We enjoy them whole, however go with your preference. If cutting in half, cook time will be less.
Storage
- Store air fryer roasted peppers in a sealed container for up to 2 days.
- For longer storage, layer peppers in a jar or small container and cover with olive or avocado oil. That will last 10-14 days in your fridge.
- Use the oil for cooking as it will have a nice pepper flavor.
Will this method work with other varieties of peppers?
- Yes! You can air fry any variety of peppers like this. Just keep in mind, if the peppers are large, you want to cut them down. Check after 10 minutes, stir and reassess remaining cook time based off of size, quantity and variety.
- Remember very hot peppers such as cayenne, chili pepper, habanero etc may not be fit for eating on their own. That of course depends on your tolerance and preference for spicy.
I have always disliked cooked peppers (except for jalapenos and shishito peppers), so imagine my surprise 10 years ago or so when I started spotting these mini sweet peppers at my grocer and began cooking them up! YUM!
Is it just me? I look for more red peppers in each bag vs the yellow and orange, The red are my favorite!
Did you know? Red peppers actually have more nutrients than green, yellow and orange peppers. Red peppers are very high in Vitamin A, C and antioxidants. Plus they have additional nutritional benefits due to their color and longer growing time.
Roasting peppers in air fryer is such an easy way to make them. No splatter, popping, constant watching, etc. In 20 minutes you'll have gorgeous & flavorful roasted peppers! Enjoy! XO Colleen
