Pork Banh Mi Meatball Sandwiches are one of the-most-delicious & memorable bites that anyone can easily whip up at home in my opinion! It's different, delicious and takes less than 30 minutes.

If you are looking for something a little different to slide in front of your family for dinner or for a weekend lunch or want to make a fun no-fuss dish for a small casual get-together. Look no further than these Pork Banh Mi Meatball Sandwiches!
The spicy Sriracha Mayonnaise gives this sandwich some great flavor and I'll bet that you will find your self whipping it up for more than just this recipe!
I like to top these sandwiches with my Spicy Spiralized Pickled Cucumbers for that umami flavor and they are so good & quick to make! You can also use pickled red onions.

Tips
- After you make your pork meatball mixture, allow it to sit for 30 minutes in the fridge (or longer), tightly covered. That way the flavors develop more.
- When ready to cook, first make one tiny little patty, cook it off and taste it. You can fix under seasoned meatballs after you cook them. This was you can adjust if necessary before rolling the meatballs and cooking them (same goes for meatloaf).
- You really do want to pan fry these pork meatballs, the crisp browned areas are super flavorful!
Variations
- Use ground chicken, beef, veal or turkey for the meatballs instead.
- Pickled carrots or Pickled Radish work well on this and can be swapped in place of the suggest pickled cucumbers or onions.
Make Ahead
- Make the meatballs a day ahead and reheat before assembling Bahn Mi's.
- The Sriracha Mayo can be made the day ahead as well.
- You can make pickled onions or the pickled cucumbers the day ahead (or days ahead) as well. They'll be ready when you are.

Pork Meatball Bahn Mi Sandwich
Ingredients
- Pork Meatballs
- 1 pound ground pork
- 2 TBS chopped cilantro
- 2 TBS scallions sliced thin
- 2 large cloves garlic minced
- 1 TBS Chili with Garlic Sauce or Siracha
- 1 TBS fish sauce
- 2 teaspoon sugar
- 1 TBS cornstarch
- Salt & pepper
- Sandwich Assembly
- 2 TBS rice or red wine vinegar
- 1 TBS sesame oil
- 1 TBS sugar
- 1 ½ cups from a bag of shredded cole slaw mix
- ¼ cup chopped cilantro more or less to taste
- my pickled cucumber spirals, pickled red onion, pickled radish or pickled cucumbers (something pickled)
- 1 jalapeno sliced thin
- Salt & pepper
- 4 crusty rolls
Sriracha Mayo
- ⅓ cup mayonnaise
- 1 TBS Sriracha
Instructions
- In a bowl, combine all meatball ingredients and mix with your hands until incorporated.
- Roll mixture into small meatballs (about 18) and set them aside on a tray in your refrigerator for 30 minutes or up to overnight, covered tightly.
- Mix your vinegar, sesame oil and sugar in a small mason jar or bowl.
- Place the cole slaw mix, cilantro & jalapeno slices in a small bowl, toss it with the dressing you made. Season with a little salt & pepper.
- Preheat oven to 375 degrees.
- In a frying pan, heat 2 TBS oil until hot and cook your meatballs until browned. You want them to get a little blackened and crispy...which is all a part of the sandwich experience.
- Once they are browned (being careful not to burn) place meatballs on a baking sheet in your oven for an additional 5 minutes or until cooked through. HOWEVER if you feel your meatballs are cooked through, skip this step.
- When ready to assemble sandwiches, split your rolls, slather on a good amount of the Sriracha Mayo (YUM), place a handful of your salad atop that, top with your meatballs and a little extra Sriracha Mayo if you wish and enjoy!
