    Fried Egg & Avocado Rice Bowl

    Three of my favorite foods come together to create this healthy and yummy Fried Egg & Avocado Rice Bowl which is perfect for breakfast, lunch or dinner!

    In about the time it takes you to fry up an egg, you can make this filling and tasty Fried Egg & Avocado Rice Bowl. Something about the yolk mingling with the avocado and rice is just to tasty.

    Make this rice bowl using white or brown rice. Make this avocado rice bowl plain or kick the flavors up by adding some Sriracha, hot sauce, chili paste, or kimchi (yum!!), either way this dish delivers on flavor.

    This is a quick and easy recipe, if using a pre cooked rice this will take you 10 minutes or less to whip up. Those 90 second pre-cooked rice bowls are a game changer when it comes to making quick meals!

    • rice
    • chives or scallions
    • avocado 
    • egg
    • fresh lime
    • Salt & pepper (cayenne or red pepper flakes for heat)

    Avocado Bowl Variations

    • Swap the fried egg for a jammy egg or two, mmm-mmm.
    • Choose to stick to this simple rice bowl recipe or decide to add additional ingredients such as sautéed veggies, spicy cucumber salad, pickled cucumbers, chicken, beef, seafood, etc.
    • Sprinkle on some crumbled crispy bacon or pork belly.
    • Add a drizzle of Sriracha, chili crisp or a big spoonful of kimchi to spice things up.
    • Change up they type of rice you use for different flavor and texture or try another.
    • Swap rice for farro, quinoa, barley, millet or your favorite grain.

    What type of rice to use

    With the advent of a multitude of 90 second rice packages, this recipe can be made super fast & easy. You can choose to steam white, brown, jasmine or your favorite type of rice for this or use one of the convenient packages verities. We especially like Veetee & Bibigo pre-cooked varieties. Both are quality in my opinion.

    If you like fried eggs as much as my daughter and I do, you will enjoy this egg rice bowl with avocado for breakfast, lunch or dinner. So tasty & satisfying and easy to customize.

    Tips

    • We all cook our fried eggs differently. For a perfect yolk, cook it sunny side up in a small pan with a dab or butter (or cooking spray). Season with salt and pepper and halfway through cover (so the top of the egg becomes firm). You can also flip briefly and remove from heat if you don't care about "seeing the orange-yellow yolk as pictured.
    • Season your rice, add in flavor enhancers like a squeeze of lime, scallions/chives, red pepper etc.
    • Season your avocado pieces with salt, pepper, lime and red pepper for a kick. It makes a difference.
    • Have fun with this easy rice bowl recipe, take it in any direction that you think you'll enjoy.

    Enjoy this Egg Avacado Rice Bowl for breakfast, lunch or dinner. It's easy to customize this egg rice bowl and make it simple or robust, plain or spicy. Its a satisfying meal.

    Ingredients
      

    • White or brown rice as much or little of it as you enjoy. The single serving microwavable rice bowls are a great option.
    • 2 TBS sliced scallions or chives
    • 1 avocado sliced (more or less to taste)
    • 2 eggs
    • Lime wedges
    • Salt & pepper
    • cayenne pepper, red pepper flakes or smoked paprika for heat

    Optional add ins

    • Sriracha drizzle or chili crisp for more flavor.
    • Spicy Cucumber Salad (see notes for easy recipe link) a delicious addition
    • Bacon crumbles or whatever additional protein you enjoy

    Instructions
     

    • Cook rice according to package directions.
    • Place rice into your bowl. Season with salt & pepper and a spritz of fresh lime juice, add in scallions/chives and toss.
    • Season your avocado slices with salt, pepper and a squeeze of lime, add to the bowl.
    • If adding the cucumber salad or additional add ins do so.
    • Fry your egg to your liking, season with salt & pepper (see notes) and add it to your bowl.
    • Drizzle with Sriracha, hot sauce, chili crisp or Cayenne pepper if you want a kick...if not enjoy plain.
    • Dig in!

    Notes

    You can take this simple avocado rice bowl in and direction you wish. Top with whatever you enjoy or have on hand.
