    Wondering what to make with leftover mashed potatoes? Here is an easy and tasty leftover mashed potato recipe. This Loaded Mashed Potato Casserole is always a hit!

    Wondering what to make with leftover mashed potatoes? This Leftover Mashed Potato Recipe is a Loaded Mashed Potato Casserole. Your leftover mashed potatoes repurposed and topped with all the things! Shown in a red and black pan topped with cheese, bacon and chives.

    Mashed potatoes are wildly popular, especially around the holidays and as a result, most hosts/hostesses make quite a large batch. You never want to run short of mashed potatoes....right? BUT what do you do with the leftover potatoes?

    There are a number of things you can do with them, however, I think next to my Mashed Potato Pie recipe and these stuffing mashed potato balls, this Loaded Mashed Potato Skillet is just about the best leftover mashed potato recipe. Simple and flavorful.

    Ingredients

    • All you need are your leftover mashed potatoes and a handful of other ingredients that you probably already have on hand like cheese, bacon and scallions.
    • Feel free to add any other things you feel that you would enjoy as well, like sour cream, chives, crunchy onions etc.

    Instructions

    • Allow your leftover mashed potatoes come up to room temperature.
    • and just like that...your leftover mashed potatoes are transformed! This Loaded Mashed Potato Skillet is SO stinking good (my kids are crazy for this), I'll bet you start making extra potatoes JUST to make this!

    Loaded Mashed Potatoes Variations

    • Put cheese IN and ON the potatoes or just on.
    • Change up the cheese used, cheddar, sharp cheddar a cheddar blend, pepper jack, smoked gouda, Monterrey jack etc.
    • Top with crispy jalapenos, crispy onions, pancetta, turkey bacon etc.
    • Instead of making this stovetop, you can also bake in an oven safe pan or casserole dish.

    Tips

    • Allow your potatoes to sit on the counter at least 30 minutes, to get some of the chill off before your work on this dish.
    • If your mashed potatoes seem a bit dry, feel free to add in additional milk/cream/butter.
    • You can certainly bake in a casserole dish, however I just love the crispy bottom cooking this in a cast iron (or heavy non-stick pan) can give there. Just depends on what you are looking for.
    • These are tasty enough to make mashed potatoes on purpose, just to make this 🙂

    Leftover Mashed Potato Recipe

    Ingredients
      

    • 4 cups leftover mashed potatoes Yo u can use any amount of potatoes, recipe is very loose.
    • ½ cup sour cream more or less to taste
    • black pepper to taste if needed
    • kosher salt to taste if needed
    • 1 TBS Chopped parsley Optional
    • 7 slices crispy bacon
    • 1 cup shredded cheddar cheese
    • ¼ cup snipped scallions or chives

    Instructions
     

    • In a bowl, combine mashed potatoes & sour cream stirring vigorously until fully incorporated.
    • Taste your potatoes, add some additional salt & pepper if needed for a full flavor.
    • Lightly coat a large non-stick or cast iron frying pan with grapeseed or olive oil (just enough to coat the surface of the pan, you don't want a puddle of oil).
    • Heat the pan over med-high heat for 1 minute, plop in the potatoes into sections and gently spread them across the surface of the pan without stirring the bottom around. Use a spatula to direct the potatoes across the pan.
    • Sprinkle the cheese, bacon, scallions and parsley over-top the mashed potatoes and allow them to heat through for about 10-12 minutes, turning the stove down to a medium heat after a few minutes. You can place a lid overtop to help the cheese melt.
    • A light crust will begin to form on the bottom of the potatoes. Just keep an eye on them since both pans and stoves vary. Reduce your heat to low if you feel the heat is too high.
    • Once the potatoes are heated through and the cheese melts, serve the potatoes on their own as a side dish or with kettle-style potato chips as an appetizer and enjoy.

    Notes

    Nutritional information will vary by your mashed potato ingredients. For the purpose of this calculation, the nutritional calculator used calculated it my "instant mashed potatoes" which is way off vs most homemade, especially when it comes to sodium.
    Jazz your leftover mashed potatoes up any way you like. Put the cheese, bacon and scallions IN and ON the potato casserole or just overtop. You decide.
    If baking, don't put scallions on until serving so they don't get charred or dried out. You can also scatter cooked bacon crumbles overtop as the cheese melts as you pull it from the oven so that the bacon doesn't overcook. 
    Add as much cheese and bacon as your heart desires 🙂
