Here's a simple Asian Edamame Salad that is perfect for a side dish for BBQ's and gatherings or as a simple lunch. It's crisp and refreshing.
The first time I visited a Corner bakery was a few years ago, and I fell in love with my first order. An Asian Pork Sandwich with a side of Asian Edamame Salad. OMGosh, I think I returned 3 times over the next month just to have it again and again.
I decided to replicate their Asian Edamame Salad since its so fresh, vibrant and good for you! It's so easy to make too. It's just such a refreshing BBQ side dish recipe or light vegetarian meal.
This edamame salad pairs really well with grilled meats in my opinion. Especially my Pork Belly Bites and my Asian style Grilled Chicken Wings.

Ingredients
- All you need for my version of this salad are shredded carrots, edamame, cucumber, red onion, scallions, cilantro (if you wish). Then make the dressing.
- Originally this salad had peppers in it (red pepper and orange pepper) however I always picked them out of it, lol! So I substituted cucumbers.
- I like heat, so I also added a few slices of jalapeno. Sometimes I throw peanuts in, mmm!
Tips
- You can shell your own edamame, however if you see shelled edamame for sale that is a big time saver.
- The simple dressing is scrumptious. I have learned that when I made certain dressings or marinades, I choose garlic paste / ginger paste vs minced garlic or ginger. It's just SO much better in a dressing in my opinion, and honestly so much easier, no mess and no time spent peeling and mincing (Gourmet Garden is my go-to for this).
- You can always but an Asian style slaw in a bag or typical slaw in a bag vs chopping things.
- Use a mason jar to emulsify your dressing, shaking the lidded jar vigorously.
Variations
- You can totally customize this edamame salad to your preference by adding in more or less or recommended ingredients.
- Top with poke, seared tuna or salmon. Serve over rice for a more robust meal.
- Add in tomatoes, a cheese you enjoy, jicama, water chestnuts, chopped peanuts or whatever you think you will enjoy.
- Make this as spicy or as tame as you like.

Asian Edamame Salad
Ingredients
- 2 cups edamame shelled
- 2 cups shredded carrots
- 1 cup chopped cucumber
- ½ cup chopped red onion
- Cilantro
- Jalapeno slices optional
- Dressing
- 1 TBS grapeseed or olive oil
- 1 TBS soy sauce
- 1 TBS rice wine vinegar
- 1 teaspoon ginger paste
- 2 teaspoon garlic paste
- 1 TBS honey
- 2 TBS sesame oil
- S & P
Instructions
- Assemble salad ingredients in a medium bowl, tossing to combine.
- Combine dressing ingredients in a mason jar and shake until emulsified. taste and adjust for your preference.
- Pour dressing over salad, toss and enjoy!
