    Raspberry Lime Avocado Ice Cream

    Guess what all of you a-vo-ca-do lovers out there?? It's California Avocado Month! That's right, its time to celebrate all that is deliciously do-able with California Avocados! This month I'm going cold...in the form of Raspberry Lime Avocado Ice Cream.

    Raspberry Lime Avocado Ice Cream

    I know, I  know some of you are like what??? Raspberry Lime Avocado Ice Cream...Avocado Ice Cream?? No way...no how...but think about it.  Pistachio ice cream seems weird, what about corn, lobster (yup just saw that today) or bacon?? You can seriously take ice cream anywhere and Avocado Ice Cream is a favorite of many!

    I have been partnering with California Avocados for a couple of years to bring you creative and crave-worthy avocado recipes. Usually I whip something up that I have been thinking about. This month, they asked us to each do an ice cream. So glad they did since I have come across it a number of times in print and in the net however, I have never had a taste.

    I decided to add some raspberries and lime to my ice cream since lime goes with avocados for sure and it equally compliments raspberries.  Plus, the berries give a fun pop of both color and texture to the Raspberry Lime Avocado Ice Cream.

    Raspberry Lime Avocado Ice Cream - Try it!

    My take on this?? It's pretty good but, it is best enjoyed fresh from your ice cream maker. We all liked it best when it was smooth and creamy, almost like a gelato. But the next day when it had frozen, it wasn't the same. So try it in a small batch, straight out of the ice cream maker.

    Oh and see the pretty jimmies aka sprinkles on my candied ice cream cones?? They are India Tree Jimmies in "Carnival" They are all natural, the colors come from vegetables and they are yummy! Leave it to my friends at California Avocados to introduce me to them (TY)! Plus...as a Philly girl I love it when I hear people call them jimmies...not sprinkles! That's what called them growing up. I once took a poll about it on my Facebook Page, about 120 people commented and it was about 50/50. People were rather passionate about it too lol!

    If you want to make candy cones with your kids (a craft they can eat...yeah!!) simple melt the chocolate of your choosing, dip in the cones and decorate with jimmies, sprinkles or whatever you call then or small candies, so fun!

    Raspberry Lime Avocado Ice Cream

    Raspberry Lime Avocado Ice Cream

    Prep Time 5 minutes mins
    Cook Time 30 minutes mins
    Total Time 35 minutes mins
    Servings 4

    Ingredients
      

    • 3 avocados
    • 3 TBS fresh lime juice a little zest of you like as well
    • 1 cup sugar
    • 1 cup heavy cream
    • Splash of vanilla extract
    • ½ pint of fresh raspberries

    Instructions
     

    • Combine avocados, lime juice, sugar, cream and vanilla in your food processor and blend until smooth.
    • Add in 6 raspberries and pulse once or twice.
    • Scrape into the frozen bowl of your ice cream maker add in 12 or so additional whole raspberries, and churn according to your makers instructions. (usually 30 minutes).
    • Scoop onto cones or into a bowl.
    • Of you want harder ice cream, scrape out of the ice cream maker bowl and into a container and freeze for 30 minutes.

    Notes

    Feel free to use less sugar if you like. Taste the mixture after you blend it in the food processor and decide if ¾ works for your sweetness expectation.

      Am I weird that green food is my favorite kind of food?! I love the color and the idea to use avocado in ice cream!

      When I grew up, the long ones (like these) were called jimmies and the round ones were called sprinkles. I've come to just lump them all into the sprinkles category, but I "get" the jimmies thing. And YUM, love the sound of avocado, lime, and raspberries in one scoop!
