    1. Wash and dry the potatoes.
    2. Peel the skins off the potatoes.
    3. Add the potato peels to a mixing bowl
    4. Drizzle on the oil of your choice
    5. Add seasoning to taste.
    6. Add peels to the air fryer, and space them apart.
    7. Air fry at 390 degrees for 8 to 10 minutes.
    8. Top with freshly grated cheese while warm if desired.

    Storage

    These air fryer potato skins are best enjoyed right away. However, leftover potato skins can be stored in an airtight container in the fridge for 3-5 days.

    To reheat, simply add back into the air fryer for a few minutes until warmed through. You can also reheat in the oven at 350 degrees until warm.

    Expert Tips

    • When making potato skins in air fryer, do not use green potato peels, those go in the compost pile instead of in the air fryer.
    • Be sure to wash and dry the potatoes well before peeling to avoid any dirt or bacteria transferring to the potato skins.
    • I like to use a mixture of oils when cooking, but you can use just one if you prefer. Avocado oil, olive oil, and coconut oil are all great options.
    • The key to crispy potato skins is to make sure they are dry before adding them to the air fryer. I like to use a clean dish towel to pat them dry.

    • 1 cup potato skins after peeling potatoes, the leftover skins
    • ½ teaspoon olive, grapeseed or avocado oil
    • Kosher salt and black pepper
    • 1 TBS each Parmesan cheese & parsley
