I make a variety of simple syrups for all different reasons. Making them is just so quick and easy and they also make fabulous food gifts too!
Making homemade Cinnamon Simple Syrup (or just about any other simple syrup recipe), is quick, economical and even better you know exactly what the ingredients are. Its a win, win...win!
Cinnamon Syrup can add a flavorful kick to homemade Apple Pie Moonshine, Applejack Mules, homemade apple cider, Christmas Wassail, coffee, tea or any fall themed cocktail or mocktail. It's lovely incorporated into baked muffins and cakes as a glaze too. Yum!
You can even thicken it up a bit for ice cream, pancakes, waffles & more. It's easy to vary this simple syrup recipe in a number of ways to suit your needs.
Add some of this to a Cranberry Moscow Mule for a nice flavor kick, delish!

Ingredients
- water
- sugar
- cinnamon sticks

Variations
- Add in a vanilla bean that's been snipped into thirds. Or vanilla bean past for a blended flavor.
- Add in a whole nutmeg.
- Add in cloves (not for me), ginger or cardamom (cardamom is amazing to flavor things).
- Swap white sugar for brown sugar or sugar in the raw.
Tips
- When making regular simple syrup, all you want to do is heat the mixture just enough for the sugar to dissolve and for the liquid to become clear. However, for making Cinnamon Syrup, you want more of the cinnamon flavor to release, so once it comes to a boil, allow it to simmer for a few minutes.
- I find that using cinnamon sticks vs cinnamon powder the way to go, as ground cinnamon does not absorb into the liquid. I a pinch use powder but strain after it sits through a fine mesh strainer.
- Once removed from heat, allow mixture to cool completely before placing it into a mason jar.
- Always make sure the rims of your jars are cleaned from any drips before placing the lid on.
- I will leave 1 stick in the jar. More than that may make it too much of a cinnamon flavor. But hey, you do you!
- Use cinnamon syrup on the rim of fall cocktail glasses before dipping in sugar, it's an added touch of flavor and scent.
- If gifting this, tie rustic string around the jar and dangle a couple cinnamon sticks from it 🙂
- If you are on blood pressure meds, diabetes meds or blood thinners, check with your doctor to determine if cinnamon may interfere with it/them.

Storage
- This will keep in a mason jar in the fridge for 3-4 weeks.
- If you go heavier on the sugar, making a thicker syrup, it will last longer. 2+ months in the fridge as sugar is a natural preservative. Just give it a good shake once a week.
- Remove cinnamon stick after 4 days.

Cinnamon Syrup
Ingredients
- 1 cup water
- 1 cup sugar
- 3 cinnamon sticks
Instructions
- Add all ingredients to a small pot and bring to a boil. Lower to a simmer and simmer for 3 minutes.
- Remove from heat, cool completely and then store in a mason jar in the refrigerator until ready to use.
