This easy Eggs and Tater Tot Casserole is customizable to your taste and has great flavor and texture. Here are some ideas on how you can make it your own.
My family loves a good Breakfast Casserole or Breakfast Pie. I love that they are hands off for the actual cooking/baking part, no flipping, sautéing or standing by the stove.
I especially like making a Christmas Breakfast Casserole and Easter Breakfast Casserole which allows me to be with my family, immersed in the gift openings, egg hunt etc. instead of tied to the kitchen.

Ingredients Needed
- Fresh / Perishables Ingredients - Eggs, milk, bacon (or sausage), onions, scallions, Tater Tots, cheese, optional peppers.
- Pantry Staples - S & P, onion powder, garlic powder, cayenne pepper (optional) .
Variations Egg and Tater Tot Casserole
- Add minced red & green peppers (festive for Christmas).
- Add minced jalapeno for a kick.
- Switch up the type of cheese used for a different flavor.
- Swap bacon for cooked and cubed or sliced kielbasa (my husbands fav). I like to crisp up the kielbasa pieces in a pan first before adding, its a better eating experience that way in my opinion.
- Instead of crumbled bacon, add diced ham or cooked breakfast sausage (pork, chicken or turkey). You can even use cooked ground beef or turkey and enjoy this for dinner.
- Use traditional Tater Tots, Crowns or mini's they all work.

Can I make this breakfast casserole ahead of time?
- Since this is an easy Breakfast Casserole to make, I do not, however you totally can make this the night before. If you make it ahead of time and store it tightly covered with foil or a lid overnight in the fridge. Your Tater Tots won't have the shape they they would otherwise but the taste will be the same. Honestly, start to finish it's 10 minutes to prep and get this in the oven which is why I just make it right before baking.
- You can snip your scallions, cook your bacon (or breakfast sausage/kielbasa), dice your onion the day prior to shave a few minutes off prep and quickly assemble by the time your oven preheats.
- If you bake this straight from the fridge, cover it with foil for the first 30 minutes since the casserole mixture will be cold to start with. You may need to bake an additional 15 minutes till done.
Tips
- Place casserole Dish onto a baking tray, just in case of drips.
- Bake time will be determined by actual size and depth of dish used. Baking dishes come in all shapes and sizes. Something like a 9x13 works with this. However other sizes will work as well or 2 smaller dishes.

Tater Tot Breakfast Casserole

Ingredients
- 32 oz bag of frozen Tater Tots You can bake these straight from frozen.
- 8 slices cooked crispy bacon, crumbles (or more to taste)
- 8 eggs if small eggs use 10, if jumbo use 7
- ¾ cup whole milk
- 1 ½ cups shredded cheese, divided I like to use Pepper Jack cheese for this, however you can use Monterey Jack, cheddar, chopped American cheese, chopped cooper sharp cheese, a shredded cheese blend or your favorite cheese
- ¼ cup chopped onion optional (my family loved onions in everything!)
- ½ cup scallions mix some in the mixture and save some for garnish.
- S&P to taste I like a lot of black pepper, remember cheese is salty so go light on the salt.
- few shakes onion powder
- few shakes red pepper flakes (optional)
Instructions
- Preheat oven to 375 degrees F.
- Grease baking dish with a little butter or spray.
- Dup frozen Tater Tots into casserole dish 9 x13 or something similar works
- Chop bacon and cook till crisp, blot on paper towels (or cook, cool and crumble).
- In a bowl, whisk your eggs, milk and seasonings. Add in onion and or scallions, add in cheese.
- Pour over Tater Tots.
- Bake at 375 for 40-50 minutes or until done to your liking
- Just before pulling from the oven top with additional cheese and bake till melted.
- Garnish with scallions and if you like additional crispy bacon.
