Why you'll love this Whipped Ricotta appetizer

Tips
- It all starts with fresh ricotta. Whole milk ricotta. The better the ricotta, the better the experience.
- If you have a farmers market or local dairy farm and get some of the fresh local ricotta. Ricotta like that is so good that you can literally eat it off of a spoon. Such a difference! BelGioioso Ricotta COn Latte is a nice one if you can find it.
- I came across a farm recently at the outdoor seasonal farmers market that sets up every Saturday for 5 hours on Saturday's (Wrightstown Farmers Market). The Market is small, typically about 20 vendors, however the fresh local produce there is amazing. You never know what you might find there.
Last month I came across Fulper Family Farms a dairy from Lambertville, NJ (which is about 30 minutes from me) who sells a variety of cheese. I tasted a spoonful of their ricotta and almost swooned...Actually, I think I did swoon a little!
I bought on the spot and have gone back and bought it again! So good! Next, I will try their Smoked Mozzarella. Gotta love great finds at farmers markets and supporting local farmers!!
How to make Whipped Ricotta
- All you need to do is whip it up!
- Place your ricotta into your mixer bowl and start whipping. add in a little honey (or your favorite sweetener), decide on a delicate topping and boom! You have yourself a pretty little platter of decadent bites!
- For the crostini, you can buy pre-made if you choose. I like to grab some French bread and do it myself, it's just so much tastier and fresh. I especially enjoy LaBrea Bread, the ones that you take home and bake for 8 minutes or so. Seriously as good as if you made it yourself.
- Slice down the bread, crisp it up a little or a lot and top with the whipped ricotta and candied nuts or whatever topping you may enjoy..
I enjoy making some crunchy candied nuts to sprinkle over the Whipped Ricotta. You could also choose to add roasted fruits, plain nuts, pomegranate arils, or seeds.
Tips
- Use premade crostini for a time saver.
- Choose how crisp you want your crostini if baking yourself. For extra flavor, rub slices with butter or olive oil and season with black pepper and a pinch or salat and herbs if you like.
- The better quality your ricotta cheese, the fresher your ricotta the better the whipped ricotta will be. If yours looks watery, strain in a cheesecloth or paper towel lined strain for a bit before whipping.
- Use a mixer or food processor to whip the ricotta. I have done both methods and find the food processor has a slight edge as far and whip results vs the mixer. However they both work.
- Serve ricotta with crostini cold.
Variations
- When it comes to whipped ricotta, you can make it a little sweet or you can make it savory.
- Top with a honey drizzle, candied nuts or dried fruit chopped small. I often sauté fresh peaches with brown sugar, cinnamon and nutmeg and top with that as well. If you want it savory, give a drizzle of olive oil, herbs, plain nuts etc.

Whipped Ricotta Crostini's
Ingredients
- ½ cup candied nuts, chopped more or less.
- 2 loaves french bread
- 8 oz fresh ricotta
- 2 TBS honey
- Honey for drizzling
- Thyme optional for garnish
Instructions
- Purchase candied nuts or make them, see notes below for recipe link.
- Use purchased crostini or slice French bread into crostini sized pieces. Line slices up on a baking sheet. Bake in a 350-degree oven until a little crisp (about 3-5 minutes (flipping halfway), longer if you want them really crisp).
- In your mixing bowl, whip ricotta, and 2 TBS honey until fluffy, about 4 minutes.
- When ready to assemble. Chop nuts into a crumble.
- Slather each crostini with whipped ricotta, top with a sprinkle of nuts, Thyme (or lemon Thyme) if you choose to use an herb and a drizzle of honey.
- Serve and enjoy!
