    Watermelon Cocktail

    Even before I started making this Watermelon Cocktail recipe, I have been in love with watermelon everything. Watermelon drinks, with or without alcohol are a definite for me in summer.

    Who else loves watermelon??

    I am almost embarrassed to say that on more than one occasion, just in the past 2 weeks alone, I have eaten ½ a watermelon all by myself!

    I may have eaten a whole one in a 24 hour period, and I am not finished yet! They are just SO good this year! AND good for you! Watermelon has great health benefits. 

    So of course I make a watermelon cocktail or two.  After all...I do love my cocktails, lol!

    You'll love this Watermelon Cocktail!

    The easiest way to make this drink with fresh watermelon is with your blender. While you could use a hand masher, the puree is what you are looking for to create a creamy texture. Alternatively, you can purchase watermelon juice.

    Ingredients for this Vodka Cocktail

    You won't believe how easy this drink is to make and most likely you have most of the ingredients on hand! 

    • Watermelon
    • Vodka
    • Lime
    • Simple syrup (Check out how to make the simple syrup in my Low Carb Vodka Lime Coolers recipe)
    • Ice

    Variations

    • Swap out vodka for tequila and make a tequila watermelon cocktail.
    • Dtn't want to bother with making a fresh watermelon puree? Try my other way of making a watermelon cocktail using Dekuyper Watermelon Pucker
    • Use rum or coconut rum instead for more of a Caribbean cocktail vibe, I have made watermelon rum cocktail previously and its a tasty combination.
    • Swap homemade simple syrup for agave.

    Tips

    • Always taste and adjust to your liking for how strong the drink is or how sweet. There is no right or wrong.
    • The better your watermelon, the better the drink. You can NOT fix a tasteless watermelon. So using watermelon when in season is best.
    • Watermelon puree separates, even if you strain it. A quick shake will fix it right up.
    • Chill your watermelon or watermelon chunks before pureeing.
    • Make the puree shortly before making the cocktails for best results.

    Watermelon Vodka Cocktail garnished with fresh watermelon

    Watermelon Cocktail

    Blended watermelon, simple lime syrup with good vodka make this Watermelon Cocktail a delicious drink.

    Ingredients
      

    • 2 cups heaping cups of watermelon chunks
    • ½ cup of the watermelon juice that results from cutting the melon (if you can save it, if not just add more watermelon)
    • ¼ cup fresh squeezed lime juice
    • Simple syrup to taste see notes
    • ½ cup or 1 cup of vodka depending on how strong you enjoy your cocktails
    • Ice
    • Watermelon balls or triangles and lime segments for garnish

    Instructions
     

    • Place watermelon chunks and watermelon juice in your blender, give it a whirl until it is pureed.
    • Add in lime juice and simple syrup and pulse until combined, taste and adjust to your preference of sweetness.
    • Add in ½ cup vodka, pulse and taste. Adjust to your preference for sweetness and strength.
    • Fill tall glasses with ice, and pour mixture over-top.
    • Garnish with watermelon balls and lime. Serve.

    Notes

    Add simple syrup according to how sweet your watermelon is as well as how sweet you prefer your cocktails. I add between ¼ to ½ cup.
    To make simple syrup combine equal parts sugar and water, heat just until sugar dissolves. Remove from heat, cool completely. Store in the refrigerator in a sealed jar for up to 2 weeks.
    If you like a little fizz in your cocktails, add in a splash or two of club soda or lemon-lime soda.

      I don't like watermelon but my husband does. They take up SO much space that he's forced to eat the thing within a day or two before I start complaining. Too bad you can't come help! 😉 And this looks so refreshing!

        I am with you. Mine buys them takes 1 serving out and leaves the entire melon sitting in our outside fridge for weeks. I used to live watermelons before we married. 😂

      I could easily eat a whole watermelon in a 24 hour period. Of course, mixing a cocktail such as this would make me feel less gluttonous because it's using the watermelon for an actual recipe. Thanks for assuaging my guilt!

      Added 6 ice cubes and 1/4 cup Midori to the blender instead of the 1/2 cup watermelon juice (the watermelon I had wasn't that juicy). Used 1 oz. maple syrup for the sweetener (I use it often as a substitute for simple syrup). Really refreshing on a hot summer afternoon!
