    Saucer-sized Ham & Cheese Buttermilk Biscuits paired with a small salad make for a satisfying lunch or dinner. A delicious way to use up leftover ham!

    Fresh, hot biscuits pulled from the oven just beg to be gobbled up! I like my food hot, always have. I have no problem juggling a hot biscuit from hand to hand as I pull it apart and pop it into my mouth. One of life's simple pleasures.

    Why you'll ❤️ this easy biscuit recipe

    • It takes little effort to make a batch of these buttermilk biscuits and its a one bowl recipe.
    • Use a biscuit cutter or simply just "drop" them off a spoon onto your baking sheet, both ways work perfectly.
    • No real precision is needed. No need to wait for rising dough or any fussiness with this easy biscuit recipe. You will happily munching on a fresh, warm bundle of comfort fast!
    • Homemade biscuits are also a great recipe to let your kids take the reigns on. Think of how excited they will be, whether 5 or 15 when they place their creation on the table (as well as take the first bite) Love that!

    Ingredients

    • flour
    • baking powder, baking soda, kosher salt & black pepper to taste
    • butter
    • cheese (cheddar, Pepper jack or blend)
    • ham
    • scallions or chives 
    • honey 
    • buttermilk

    Variations

    • Put as much ham and cheese into the biscuits as you like. If you want them extra cheesy...go for it, extra ham? Add away!
    • You can also choose to leave the ham out (or replace with crisped bacon, yum!)
    • Play around with the cheese(s) you use.
    Ham and Cheese Buttermilk Biscuits. Easy to make biscuits and even easier to eat!

    I made recipes last week using leftovers from a Hatfield Ham we had enjoyed for dinner. A good ham is always delicious however I like what I can make from the leftover ham even better! Two favorites are this simple Ham & Cheese Hash Brown Bake, and this Cuban Sandwich Style Mac & Cheese which I have to say is the best mac & cheese I have made to-date!

    I like to make multiple variations of hot biscuits and scones to enjoy with tea or a glass of wine when I watch Downtown Abbey (or any other British show, lol). I slice these biscuits in half as well to make small sandwiches, yum!

    Seriously Downton Abbey the best TV show I have ever watched! I can't even say who my favorite character is. The interactions and friendship of Violet Crawley & Isobel Crawley fascinate me. AND the quotes that emerge from Violet Crawley aka Dame Maggie Smith are so spot on! If you have never watched Downtown Abbey...I envy you. I wish I could watch again for the first time 🙂

    My husband can't believe that his sci-fi loving gal could be so smitten with a show such as DA. Little does he know! Pinky out!

    Easy to make Ham and Cheese Buttermilk Biscuits. A perfect recip to use up leftover ham but good enough to get ham just to make!

    Ingredients
      

    • 2 cups flour
    • 1 TBS baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon kosher salt more or less to taste
    • ½ teaspoon black pepper more or less to taste
    • 7 individual TBS COLD butter
    • ¾ cup shredded cheese cheddar, Pepper jack or blend
    • ¾ cup diced ham
    • ½ cup scallions sliced thin or chives more or less to taste
    • drizzle of honey optional
    • 1 cup buttermilk

    Instructions
     

    • Preheat oven to 425 degrees.
    • In a bowl, combine flour, baking powder, baking soda, salt and pepper and whisk to blend.
    • Cut in cold butter with a pastry cutter or fork intil crumbly (you could also do just this stage in your food processor).
    • Add cheese, ham and scallions and toss to combine.
    • Make a well in the center of the mixture, add buttermilk and honey if using and gently stir it together with a fork or spatula until combined. Don't over-mix.
    • You can then scatter flour on your counter or parchment paper and form dough into a square and cut into biscuits with a biscuit cutter or simply scoop 2-3 TBS (or a cookie scoop) at a time and drop on your baking sheet (lined with parchment paper or lightly greased). Or form into a rectangle and cut into square or rectangle biscuits.
    • Bake for 10-11 minutes or until done to your liking. Making traditional sized biscuits will yield about a 10 biscuits.

    Notes

    Play around with what you add to these easy drop biscuits. Switch up the cheese(s), swap scallions for jalapenos. Swap ham for bacon or leave out all-together. This recipe is very easy to work with.
    The large the biscuits, the longer the bake time.

        FIVE Stars!! My Go-To Ham&Cheese Biscuit recipe. I omit the chives, and add 1 cup of ham and 1 cup of cheddar. I also drizzle butter over hot biscuits, because there’s no such thing as too much butter!!
