    Blueberry Cheesecake Shooters

    A great use for fresh blueberries is making a blueberry compote. It's so easy and tasty! We love making these fun Blueberry Cheesecake Shooters during blueberry season. You may this a Cheesecake Parfait as well, whatever you call them, they are delicious!

    These tasty cheesecake parfaits are easy to make! Blueberry Cheesecake Shooters make a fabulous party dessert. Topped with Blueberry Compote, this easy party dessert is delicious! Shown in small glass ramekins. Fresh blueberries garnishing the dessert. Graham cracker crumb base, no bake cheesecake filling and blueberry compote.

    When you need a dessert you can make ahead and enjoy later, these cheesecake shooters are perfect for that! Just make your blueberry compote (or change it to cherry, strawberry, blackberry or raspberry compote) ahead of time. Make up to 3 days before.

    You can also make the graham cracker crumbs and cheesecake filling in advance as well and assemble when ready.

    This is a great party dessert recipe! It's even great for transporting and assembling on site for an event (which I have done a few times).

    Dress these Blueberry Cheesecake Shooters up or down. Serve in shooter glasses, wine glasses or disposable plastic shooter cups with disposable spoons. Or make as one big dessert in a pretty glass bowl.

    My 12 year old son made the Blueberry Compote (love that kid!).  I have been teaching my kids to taste as the go when helping in the kitchen and adjust how they see fit, he tasted it and said "it needs something".

    He rummaged in our spice pantry and came back with my homemade Spiced Sugar it elevates so many things PLUS the flavored sugar makes a great & inexpensive food gift!

    • vanilla

    • cream cheese, softened

    Variations

    • Add a bit of sophistication to your blueberry topping by adding a little cinnamon and cardamom.
    • Create just a bottom layer of crumb mixture or two layers.
    • Save a little crumb mixture and use as a topping garnish. YOu can also garnish with some fresh blueberries or a mint leaf.
    • Swap graham cracker crumbs for Biscoff cookie crumbs, yum!
    • If gluten is an issue, leave out the graham cracker crumbs or swap for something similar gluten free.
    • Swap cheesecake mixture for something lighter like vanilla yogurt (a high protein Greek yogurt is delicious with this topping). I love this Blueberry Swirl Yogurt.
    • This blueberry mixture is also fabulous on cakes, like this fabulous Blueberry Lemon Cake.

    Tips

    • Serve cold.
    • If serving in small shooter dishes or cups, after spooning in your crumb mixture, place filling in a plastic baggie, sip off one end and pipe in. It's a nice fresh look vs spooning it in. After, tap tap tap your cups/bowls to even it out before adding berry mixture.
    • If sugar is an issue, depending on the sweetness of your blueberries, you may be able to cut it down a TBS or more.
    • Blueberry compote will thicken as it cools.
    • When making blueberry compote, use a pot larger than you think you need. If it spatters on you, it will stain.

    Make Ahead

    • Make each component (crumb mixture, cheesecake filling and berry compote) ahead of time (up to 3-4 days ahead) and assemble when ready.
    • Store cheesecake mixture and berry compote in the fridge.
    • Small mason jars with lids make for easy transport that's ready to enjoy!

    Blueberry Cheesecake Shooters

    These tasty cheesecake parfaits are easy to make! Blueberry Cheesecake Shooters make a fabulous party dessert. Topped with Blueberry Compote, this easy party dessert is delicious!

    Ingredients
      

    Cheesecake Mixture

    • 8 oz cream cheese softened
    • 16 oz sour cream
    • 1 - 5.1 oz box vanilla instant pudding mix
    • ½ cup sugar
    • 2 teaspoons vanilla

    Crumb Mixture

    • 1 cup of graham cracker crumbs
    • 2 TBS melted butter

    Blueberry Compote

    • 2 pints 2 cups of blueberries
    • 2 TBS water
    • 1 TBS fresh lemon juice
    • ¼ cup sugar
    • Optional - A dash or two of Cinnamon and cardamom if you have it

    Instructions
     

    • In your mixing bowl mix the cream cheese and sour cream until blended. Add in the pudding mix, sugar and vanilla and mix on medium for 3 minutes.
    • Place in the refrigerator for at least 30 minutes and up to overnight to allow the flavors to mingle.  
    • Crush the graham crackers in your food processor until just crumbs. Add in the butter and pulse until combined. Place in a small bowl or mason jar and set aside.
    • To make the blueberry compote, place all ingredients into a saucepan, bring to a boil.  Lower the heat and allow the juices to thicken, stirring often.  After about 6-8 minutes, it should be nice and thick and the juice should be more like a syrup,  Remove from the heat and allow to fully cool.  Chill until ready to use.  Can be made up to 2 days in advance.
    • In your shooter cups, mason jars, wine glasses or whatever you may be using, first spoon enough graham cracker mixture to cover the bottom.
    • Spoon or pipe in some of the cheesecake mixture, spoon enough compote in to cover the cheesecake mixture, spoon or pipe in a second layer of cheesecake mixture (optional), then place as little or as much of the compote on top.  You can swirl it in or put a decent amount - your call.
    • Garnish as you wish (or not) with fresh blueberries, a sprinkle of crumbs or a fresh herb.
    • Chill until ready to serve or transport. These really are so easy; people will think you worked harder than you actually did 🙂  If you have 4 or 6 oz mason jars with lids these become SO easy to transport.  You can also make this as one big parfait instead of minis.

    Notes

    Choose to make as one large cheesecake parfait in a trifle dish or glass bowl.
    Change up the fruit used for the compote or use a mix of berries.
    If serving for a family or small gathering dessert where it is the only dessert, serve 4-6 oz portion. When serving for a larger party / gathering where other desserts are offered as well, cut it down to 2-4 oz shooters.

      The Blueberry Cheesecake Shooters look delicious.I like that it is served in individual ramekins. I like that it is an easy recipe, that even a novice cook like myself could reproduce.
