    Banana Bread Cookies

    Looking for a banana cookie recipe to help use up an old banana or two? I've got you! Give these Banana Bread Cookies a try! These have been a favorite of my children since they were toddlers and now (sob), they are 19-22.

    I don't know about you, but me, I turn right into the Cookie Monster...it's true, whenever a homemade cookie is near.

    I love cookie batter too!  However I never want a hot cookie of the oven (that is when my husband wants them...hot from the oven), instead "I" prefer to wait until the next day to munch and crunch by way to bliss!

    Breakfast, lunch, dinner or as a snack, if there are homemade cookies, I want them! How about you? Which one gets you every time? I am particularly obsessed with biscotti cookies and have a number of recipes for them here.

    Don't throw away those old bananas! These Banana Bread Cookies with Chocolate Chips are like banana bread and a cookie had a baby :)

    Why you'll love these Banana Bread Cookies

    • These Banana Bread Cookies are tasty! Plus, its a tasty way to use up and old banana or two and a great snack to tuck into the kids lunchbox.
    • They're cookies however they taste like banana bread. We like them with chocolate chips added in. You can leave them out or swap the chocolate chips for nuts, white chocolate chips or whatever you dream up.

    Ingredients

    • flour
    • oats
    • baking powder, baking soda, salt
    • cinnamon
    • butter 
    • brown sugar / white sugar
    • egg
    • vanilla
    • oil
    • banana
    • chocolate

    Variations

    • Use chocolate chips or even better chopped dark chocolate like a bar of 72% dark Ghirardelli. Or omit the chocolate altogether or swap chocolate for white chocolate chips.
    • Add in your favorite chopped nuts.
    • Drizzle with chocolate or dip half of the cookie in melted chocolate.

    When you can't decide between making banana bread or cookies, give these Banaa Brread Cookies a try.

    Baking Tips

    • Do allow the banana bread cookie dough to sit in the fridge for 30 minutes before scooping.
    • If leaving in the fridge for hours or overnight, be sure to cover tighly and allow batter to sit on counter for 30 minutes before scooping.
    • Use parchment paper or a silicone baking mat.
    • Press down on the banana bread cookies batter, flattening just a bit, after placing each scoop of batter onto tray.
    • You can scoop batter into portions and freeze for up to 4 months. Just pull out when you want to bake a few. Freeze them on a plate or baking sheet for 2 hours and then portion into a container or freezer bags once hard.

    After fully cooled, store in an airtight container for a week.

    Ingredients
      

    • 1 ¾ cups flour
    • 2 cups old fashioned oats
    • 1 ½ teaspoons baking powder
    • 1 teaspoon baking soda
    • pinch salt
    • 1 teaspoon cinnamon
    • 1 ½ sticks butter 12 TBS
    • ½ cup brown sugar
    • ½ cup white sugar
    • 1 egg
    • 2 teaspoons vanilla
    • 1 TBS vegetable oil
    • 1 large overripe banana
    • 3.5 oz dark chocolate bar, such as Ghirardelli, rough chopped into odd shaped bits or ½ cup of chocolate chips (or more to taste) NOTE Some Ghirardelli bars are 4 oz, either works.

    Instructions
     

    • Combine flour, oats, baking powder, baking soda, cinnamon and salt in a bowl, whisking to blend. Set aside.
    • In your mixing bowl, combine butter and sugars and mix until blended and fluffy, about 2 minutes.
    • Add in egg, vanilla, oil and banana and mix until combined.
    • Add in dry ingredients and chopped chocolate / chocolate chips, mixing until combined.
    • Cover and chill for 30 minutes.
    • Preheat oven to 375 degrees and link a baking sheet with parchment paper.
    • Use a cookie scoop or place about 1.5 TBS of dough for each cookie, spread out and pat the dough mound down just a bit.
    • Bake for 9-11 minutes and enjoy!

    Notes

    Refrigerating your cookie dough for 30 minutes is recommended for best results.
    Use a small cookie scoop to form, place on baking sheet and press down a bit on the top of each cookie before baking to slightly flatten them.
